Summer Crepe Cake

Ak zijete niekde, kde je krasne horuco cez vacsinu roka alebo ak zijete niekde, kde je leto poriadne teple, krasne a ziarive – v tom priprade ste vyhrali. Vyhrali ste stastie od matky prirody. Behanie na boso po trave, byt pobozkany horucimi lucami paliveho slnka, oberat dozrete egrese a ribezle, dzemovanie so starymi rodicmi na zahradke v tieni ceresnovych stromov.

Ak naopak zijete niekde, kde uvidite slnko len par dni v roku a leto je uprsane, tmave, sive a chladne, to stastie si musite vytvorit. Ked niekedy len nachvilocku zasvieti slnko v tomto nasom uprsanom Anglicku, srsim stastim a utekam hned von. Sadnem si na travu a obdivujem krasy oceanu. Obdivujem ako voda naraza na skaly  v zalive a ako sa mi sum oceanu dostava pomaly do usi ako ta najkrajsia melodia prirody. Zboznujem si vyzut topanky a prechadzat sa po chladnej a orosenej trave kratko po vychode slnka..

Ak su ale oblaky tvrdohlave a po slnku nie je ani stopy.. Ak sa vam v zivote naskytnu problemy a nezda sa byt nikde v blizkosti ziadne riesenie..ak neviete pochopit preco je vo svete tolko nenavisti, zla, nepokojov a nevludnosti.. ak potrebujete utiect pred svetom. nezostava nam nic ine, len si uzasnu naladu, leto, krasne pocasie, stastie, rodinnu pohodu a lasku vykuzlit vo vlastnej hlave a vo svojom srdci. Prave v smutnych a tazkych chvilach by sme mali stat jeden pri druhom, pomahat si a byt stastnymi, ze sme zdravi a ze mame to, co ini nie.

Kdekolvek na svete sa nachadzate, budte stastni. Smejte sa, milujte, sirte okolo seba dobru a pozitivnu energiu. Svet to potrebuje.

Cim viac davame, tym viac dostavame. Cim viac stastia a lasky dame, tym viac stastia a lasky sa k nam dostane. Toto vsetko dokaze menit svet. Zmenme ho spolu k lepsiemu.

Radujte sa, oslavujte jednoduche momenty v zivote, postavte si rortu z palaciniek a spravte si cokoladovu polevu – domacu a tu najlepsiu!

Palacinkový koláč (bez receptu)

Chcem, aby sa ludia nebali varenia a chcem, aby sa nemuseli vzdy drzat presnych postupov, vazeni ingrediencii a roznych mierok. Chcem, aby ludia trosku viac experimentovali, nebali sa a verili si. Takze sa nebojte, experimentujte, skusajte nove veci a hlavne si ten cas v kuchyni uzite! :)

nieco okolo 2 salok pohankovej muky
nieco okolo 3,5 salky tekutin (ja pouzivam 2 salky rastlinneho mlieka a 1,5 salky vody)
stipka morskej soli
vyskrabkane semiacka z vanilkove lusku (pridavam ich pre extra fajnu aromu)
1 tbls melted coconut oil or olive oil
2-3 lyzice pomletych lanovych semiacok (pomahaju palacinkam aby drzali pokope; uprimne som skusala robit palacinky cisto len z muky a vody, podarili sa perfektne – zalezi ale velmi na kvalite pannvici aku pouzivate; keramicka je uzasna, neprelipe sa na nu nic! :)

Na ozdobu:

banany (pekne dozrete)
jogurt
cokoladova tahini omacka (recept nizsie)
malinovy lekvar (ja som pouzila malinovy bez cukru – mozte pouzit popucene cerstve malinky)
cerstve letne ovocie podla chuti (malinky, jahody)

Podme sa vrhnut na pripravu palacinkoveho cesta. V mise si spolu zmiesame muku, mlieko, vodu, sol, olej, vanilkove semiacka a lanove semiacka dokym vam nevznikne jemne cesto. Malo by byt konzistencie presne ako na palacinky – nie moc huste, nie moc riedke.

Cesto ulozime do chladnicky na 15-30 minut, aby si oddychlo a aby pohankova muka nasala trosku vody – aby bolo cesto kompaktne.

Po vybrati cesta z chladnicky ho riadne premiesame. Cesto sa niekedy usadi na spodku misy, preto ho poriadne premiesame.

Nad miernym ohnom si rozpalime panvicu, potreme ju troskou kokosoveho oleja a zacneme s palacinkami. 1/4 salky cesta si vylejeme na panvicu a kruzivymi pohybmi panvice cesto rozlejeme po celom povrchu. Pecieme 2 minutky, dokym cesto na povrchu nie je suche, potom palacinku otocime a opekame z druhej strany cca 30 sekund.

Pokracujeme takto az dokym nam nezostane ziadne cesto.
ps. prva palacinka skoro nikdy nie je perfektna, tu mozete zjest sami.

 

Čokoládová tahini poleva

1/2 salky tahini
1/3 salky vody
1/4 salky javoroveho sirupu

Tato cokoladova omacka/poleva je asi ta najjednoduchsia aku len mozete spravit. Zmiesame si spolu vodu a tahini, dokym nam nevznikne jemna, svetla a kompaktna hmota. Primiesame k nej kakao a javorovy sirup a riadne premiesame. Vznikne nam uzasna, kakaova poleva, ktora chuti bozsky. Dame si ju stranou alebo ju uskladnime v chladnicke po dobu 2 tyzdnov.

Palacinky mame hotove. Cokoladovu tahini omacku tiez. Podme teda na zdobenie nasho kolaca!

Na tanier (alebo na stojan na kolac) si polozime palacinku. Navrch si poukladame platky bananov a prikryjeme to dalsou palacinkou. Na palacinku si nanesieme cokoladovu tahini omacku, prikryjeme dalsou palacinkou a na tu si natrieme lekvar. Opat prikryjeme palacinkou a potreme jogurtom. Prikryjeme dalsou palacinkou a cely postup opakujeme dokym sa nam neminu vsetky palacinky. Na najvrchnejsiu palacinku dame trosku jogurtu, poukladame na vrch krasne letne ovocie. Mozno dozdobime aj ozdobnymi kvietkami.

Potom sa uz len tortou trosku popysime, nakrajame a oslavujeme. Oslavujeme krasny zivot, uzasne chvile a cas straveny s rodinou :)

If you live somewhere where it´s beautiful, sunny and hot all year around, you jave basically won the lottery. Or even if you live somewhere where the summer is hot, endless and bright – you should count yourself lucky. Lucky that the Mother Nature has giving you all the sunlight that you breath in; all the power for your soul. The feeling of hot summer rays kissing your sunburnt skin, running around grass barefoot, making jams with grandparanets in the shadows of cherry trees. Summer makes every moment breathtaking.
But on the other hand, if you only see the sun for a few days in a year and the summer is nothing but rainy and grey, you simply need to create the summer. When the sun decided to come to us through the misty clouds on thy sky, here in the UK, I run outside. I don´t think twice, because it all might be gone within minutes. Just like everything else in life. Moments don´t last forever, it just the memories we all carry around with us and treasure deep inside our hearts.

So if the sky and the clouds are stubborn and there is not even a sign of the sun, make you own. Make your own sunshine, make your own happiness. If there are many troubles and problems in your life and you simply can not come up with any solution; if you feel like the whole worl is falling apart; if you feel like there is too much hate, too much cruelty and not enough kindness in the world..create your own happiness, create love around yourself.

Forget about what´s happening in the world and simply be. Be happy, appreciate every little thing you have got in life – many people don´t have it.

No matter where in the world you are, enjoy all those amazing and precious moments. Laugh, love and share the positive energy everywhere you go.
Because the more you give, the more you get. The more love you give to others, the more love will come back to you. All of this can change the world. Let´s make this all happen, let´s make the world a better place.

The (no-recipe) Crepe Cake 

I want people to cook without following recipes and I want them to feel wild and free everytime they put an apron on. So please, experiment in the kitchen, follow your heart and intuition. Cooking is fun!

 

about 2 cups of buckwheat flour

about 3,5 cups of liquid – I do 2 cups of plant milk and 1,5 cups of water

tiny pinch of salt

some scraped vanilla seeds from a vanilla bean

1 tbs melted coconut oil

2-3 tablespoons of ground linseeds (this helps the pancakes to stick together better, although I have made pancakes with flour and water only before, and it worked like magic as well. The key here is a good pan – ceramic – that won´t mke the pancakes to stick to it.)

some coconut oil for greasing the pan lightly

Fillings

tahini-chocolate sauce (recipe down below)

bananas

raspberry jam

yoghurt of your choice

fresh berries for decoration (strawberries, raspberries)

 

Let´s make the pancakes!

Mix together flour, salt, vanilla beans, linseeds, oil, milk and water until you will end up with a smooth batter. You want the batter to be just like a pancake batter, not too thick, but not too thin. Put the batter to the fridge for about 15-30 minutes. The batter will set a will become a little bit more thicker.

Take the batter out of the fridge and mix through. It chould be runny but not too thin.

Lightly grease a very good ceramic pan with a coconut oil and pour 1/4 cup of the batter onto a pan while swirling with the pan to make crepes. Make sure that the batter spreads around the pan nicely. If you need more batter, just use more of it.

Cook for about 2 minutes on one side (until there is no more wet surface on a pancake) and flip the pancake. Cook for 30 more seconds.

Continue until there is no pancake batter left.

 

Tahini Chocolate Sauce

1/2 cup tahini

1/3 cup water

1/4 cup maple syrup

5 tablespoons raw cacao or roasted cocoa powder

This is the simples chcoolate sauce you can make. Mix tahini and water together untilit becomes light in colour and it combines together.

Add in maple syrup and cacao and mix well until completely smooth and delicious. Taste and if you prefer it a bit more sweeter, add in some more maple syrup.

Set aside. Or put to a glass jar and store in the fridge for up to a couple of weeks.

 

Now, let´s put it all together.

Put a crepe on a plate. Arrange some banana slices over the pancake. Cover with another crepe. Spred some chocolate sauce over it. Cover with another crepe. Spread over some raspberry jam. Cover with another crepe. Spread some jam over it. Cover with another pancake and continue like this (or however you like) until you use all of your pancakes.

Get to the last one, put some yoghurt on top, decorate with berries and some flowers.
