Summer Strawberry Soba Salad

Summer. Summer means a lot to me. Endless nights with a bright sky full of stars. Running barefoot on grass. Watching the Sun setting up on the sky early in the morning. Enjoying bright and orange sunset late at night. Breathing in warm air and letting it touch your hair. Countryside. Birds singing. Standing in the rain on a hot summer night and getting kissed by cold rain. Making fire in woods. Camping. Getting connected with nature after a long winter full of cold days. Sitting in a field and catching the sun rays. Getting sunburnt. Laughing. Picnicking. Feeling young, wild and free. Picking up strawberries. Enjoying life even more that normally.

To me, that is summer. That and even more. Summer is full of love, laughter and energy. And good vibe, good people.

Summer is here. And we need to take it all in. We need to breathe it, we need to live it.

Less time in the kitchen means having more time for doing all the little precious things we all want to do in summer. There is a recipe for you at the bottom of this post for a super quick salad that´s full of beautiful colour, crunch, flavour and this season´s favourite… strawberries!! I can´t get enough of them, I keep going to our farmers market every other day, because it seems like I can´t get enough of them. It´s been such a long year without fresh strawberries, don´t you think? The perfect little berries of sweetness, beautiful colour and banging flavour are here for us to munch on them until they will be gone.. gone in our freezers and out of market shelves.

Strawberries are full of vitamin C, they promote eye health, fight against cancer, reduce inflammation, boost immunity and also act as a natural ´toothpaste´ by remoivng stains on our teeth. Isn´t it amazing?! And what is a better way to eat yourself healthy thanmunching on some seriously yummy and sweet strawberries ?! :)

 

Summer Strawberry Soba Salad

 

2 handfuls of baby spinach leaves

1 handful of pea shoots (or use more spinach mixed with some fresh or defrosted peas)

bunch of asparagus

punnet of strawberries

packet of soba noodles (look for 100% buckwheat noodles as they often add wheat flour to it-nothing against it, but the flavour needs to be nutty and buckwheat-y)

fresh basil leaves

1 organic lemon

balsamic vinegar

honey or date syrup (if you need ana extra sweetness for some reason)

freshly ground black pepper

2 spring onions

 

Cook your noodles. This is easy, beacuse soba noodles cook in about 6 minutes. Fill a sauce pan with water. Bring to a boil, add your noodles in, stir a few times while the pasta is cooking so it doesn´t stick together. Once cooked, strain the pasta, and let it in a very cold water.

Let´s move onto our beautifully looking vegetables.

Wash your spinach and pea shoots. Clean your strawberries. Snip off the ends of asparagus and rinse it under a cold water.

Put all of your leaves into a bowl. Using a peeler, shave the asparagus. Add in fresh basil leaves. Mix it with your hands.

Squeeze the juice of 1/2 lemon over it.

Cut strawberries into quarters and toss them through the salad together with your cooked(and now cold and rinsed) soba noodles.

Mix it all up gently. Put on a big plate, decorate with some more basil leaves, drizzle over balsamic vinegar (be generous), sprinkle with plenty of black pepper and chopped up spring onions. Drizzle with honey or with a tiny bit of date syrup if you like. Enjoy on a hot summer night.

Leto. Znamena pre mna mnoho.

Nikdy nekonciace letne noci plne krasnych a ziarivych hviezd na nebi. Kracanie po trave na boso. Pozeranie sa na oblohu ako sa slnko pomaly prebudza do noveho dna. Vychutnavanie si krasnej oranzovo-ruzovej oblohy pri zapade slnka. Dychanie tepluckeho letneho vzduchu, ktory nam veje pomedzi pramene vlasov. Vyletovanie na dedinach. Pocuvanie spev vtakov. Ked stojime vonku v letnej burke a nechame sa bozkavat chladnymi kvapkami dazda. Kempovanie. Stanovanie. Zblizovanie sa s prirodou po tom ako sme sa jej ledva dotykali cez dlhu a nekonecnu zimu. Sedenie v poli divych kvetov a chytanie slnecnych lucov. Ked nas spali horuce slniecko. Smiech. Zazitky. Rodina. Chodenie na pikniky. Ked sa citime plny energie, zivota, a ked sa citime divoko. Zbieranie jahod. A uzivanie si zivota este viac ako doteraz.

To vsetko je pre mna leto. To vsetko a este viac. Leto je plny lasky, stastia, skvelej energie, smiechu. Plne dobrych ludi a vzdy skvelej nalady.

A leto konecne prislo! Je tu a musime sa ho nabazit. Musime ho cele vcitit do seba, musime ho zit celym svojim srdcom a dusou.

Uzivat si leto naplno znamena stravit menej casu v kuchyni a viaceh casu na robenie tych blaznivych malickosti, ktore nam zivot ponuka. Byt na luke a nahanat motyle. Alebo lezat na trave a uzivat si slnecne luce na nasej tvari. Preto je pre vas na konci prispevku recept, ktory vam nezaberie viacej ako 15 minut v kuchyni, no ktory potesi vase cele telo na velmi dlhu dobu. Recept na krasne farebny, osviezujuci salat plny charakteru, leta a mojej sezonnej lasky.. jahodiek! :) Dlho po nich nebolo ani stopy po tom ako sa minuly rok ´vyparili´ zo vsetkych debniciek u zeleninarov na trhoch. a kedze su konecne tu, neviem sa ich nabazit. Jem ich na ranajky, obed, veceru a medzi jedlami. Su to tie najkrajsie poklady leta plne sladkosti, nadhernej farby a chuti, ktora ma vzdy dostane do kolien. Su tu pre nas na to, aby sme si ich uzili co najviac mozeme dokym opat nezmiznu.. do nasich brusiek a mraziakov ! :)

Jahodky su velmi bohate na vitamin C, podporuju dobry zrak, bojuju proti rakovine, redukuju zapaly v tele, podporuju imunitu a taktiez su naturalnou pastou na zuby, pretoze ich male semiacka zvonku nam pomahaju ciistit zubnu sklovinu. Vedeli ste, ze jahodky su vlastne jedine ovocie, ktore ma semiacka zvonku plodu a nie zvnutra? :) Su pre nas naozajstnou prirodnou lekarnou a bola by skoda nejest ich. A naozaj si ani neviempredstavit chutnejsiu cestu ako byt zdravsimi nez si vychutnavat krasne sezonne jahody plne tej najsladsej chuti. Vy ano? :)

Letný soba šalát s jahodami

2 hrste mladych listov spenatu
1 hrst hrachovych vyhonkov (alebo pouzite trosku viac spenatu plus nejaky ten hrasok)
viazanicka spargle
velka hrst jahod
balenie soba cestovin (cisto pohankove nudlicky; no hladajte tie 100% pohankove, pretoze do niektorych vyrobcovia pridavaju psenicu-nic proti kamaratke psenici, ale tu vam ide o tu charaketirsticku chut pohanky)
listky cerstvej bazalky, mala hrst
1 bio citronik
ocot balsamico
med alebo datlovy sirup (na dosladenie pre tych najsladsich)
cerstvo namlete cierne korenie
2 mlade zelene cibulky

Je pred nami krasna vecera, tak podme na to!

Najprv si uvarime soba cestoviny. Klasika – naplnime hrniec vodou, privedieme k varu, do hrnca supneme cestoviny, niekedy ich premiesame a po 6 minutach by soba noodle mali byt hotove. Ocedime ich, preplachneme a nechame v poriadne studenej vode, kym si pripravime nasu peknu zeleninu.

Umyjeme si speantove listy a hrachove vyhonky. Umyjeme a ocistime si jahodky. Zo spargle si odlomime tie drevnate spodky a umyjeme ju v studenej vode.

Vsetky nase listy si prelozime do misy. Pomocou skrabky si na jemne pasiky ´narezeme´ sparglu a tiez ju prihodime k salatu. Prihodime natrhane bazalkove listy a vsetko jemne premiesame rukami.

Polovickou citrona pokvapkame vsetko co je v mise. Taktiez pridame nakrajane jahodky na stvrtky a nase vychladnute (a samozrejme precedene) soba cestoviny. Jemne vsetko premiesame rukami.

Salat dame do misy, ozdobime cerstvou bazalkou, pokvapkame balsamicom – budte stedri a nesetrite nim, pokorente cerstvo namletym ciernym korenim a posypte nakrajanou mladou cibulkou. Dosladdte medikom alebo troskou datloveho sirupu ak si prajete.

Mame hotovo a tak si uz len salat vychutnajte v horuci letny den. Mnam! :)
