Spring Potato Salad. Jarný zemiakový šalát.

We need changes, constant challenges and new and exciting things happening in our lives. That´s why the weather changes, that´s why there is the day and the night, that´s why no day is the same. So we would always face new situations, so we would always learn and experience new things and so we would never get bored. And it´s working for me! :)

Actually, thinking about it, I am constantly looking for changes in my life. Whether that means having different breakfast every day or taking new routes to work. I need changes to keep my mind occupie and busy.

And now, when the season has changed, I couldn´t be happier. The mornings are bright, sunny, full of life and exciting. I couldn´t be more happier when waking up in the morning before the sun rises and wakes up the whole world to a new and beutiful day full of good energy, vibes and happiness.

As as the spring came, I needed the abundance of new, fresh and colorful meals. PLENTY of radishes, asparagus, fresh herbs, peas, sorrel, watercress, purple sprouting broccoli, spring onions, rhubarb.. the colors and flavours start being alive after a long and deep winter. Who wouldn´t love to have so much color and flavour on a plate all of a sudden?!

So, come with me and eat with me well. Very gorgeous salad of flavourful new potatoes, hypnothizing pink radishes, springy green asparagus and tangy, very yummy dressing. Plus some refreshing and crunchy herbs on top. Spring has begun beautifully and you need nothing else than to take this to a picnic and enjoy it with a big spoon.

Spring Potato Salad

1/2 kilo of new potatoes

1 big bunch of beautiful radishes (leaves still intact)

bunch of asparagus

spring onions

chives

 

Mustard dressing

5 tablespoons of olive oil, try to buy the best quality you can afford

1/2-1 tsp dijon mustard (adjust to your taste)

a few splashes of apple cider vinegar

pinch of sea salt

freshly ground black pepper

 

Scrub your potatoes with a veggies cloth and put them in a pan with a big pinch of salt. Cover with water. Bring to a boil and then lower the heat. Let them simmer for about 15-20 minutes until they are cooked through. You can check by piercing the knife through one of the potatoes.

When the potatoes need only a minute or two, prepare your asparagus.

Bend the ends off and they will break exactly where they need to. Discard the ends and chop the asparagus into bigger pieces. Rinse them with water and put them on top of your potatoes. Cover with lid and steam them like this for about a minute or two. Not longer as you still want them to have the lovely crunch.

Once cooked, everything and let it cool.

Wash your beautiful radishes. Cut them into thin slices (or use your mandoline).

Take a big salad bowl. When the potatoes are cool enough to handle, cut them into halves (or bigger chunks). Mix them lightly with radishes, some radish leaves and asparagus.

Now, make your dressing.

Mix all of the ingredientes for dressing in a small jar or glass. Use a fork to do it and mix until it all emulsifies together. The dressing should be creamy and luscious. Taste and adjust to your liking.

Now, pour your dressing over the salad and using your hands, mix it all carefully. You don´t want to use any spoon for this-you would mash the potatoes too much.

Chop up some chives and spring onions and scatter them over your salad. Finish it off with a little drizzle of olive oil and some sea salt.

Serve as it is or with some lovely sourdough bread and beans.

Verim v to, ze v zivote potrebujeme zmeny, neustale vyzvy a nove, vzrusujuce veci, ktore sa deju okolo nas kazdy den. Preto sa skoro kazdy den meni pocasie, preto sa menia rocne obdobia, preto sa strieda den s nocou, preto nie je kazdy den taky isty. Aby sme sa stretavali zoci voci s novymi situaciami, aby sa vzdy nieco nove ucili a aby sme sa nikdy nenudili. No a verize pre mna to naozaj funguje. :)

Vlastne, ako tak rozmyslam, ja tie vyzvy a zmeny v zivote doslova vyhladavam. Nevyhladavaju oni mna ale ja ich. Takze zabava je naozaj zarucena. Ci to znamena mat odlisne ranajky kazdy jeden den alebo to znamena kracat do roboty zakazdym inou cestou, vzdy sa snazim trosku si zabavit mysel.

A teraz, ked sa zmenilo rocne obdobie z dlhej a tmavej zimy na uzasnu a zivotom naplnenu jar, nemohla by som byt stastnejsia. Vstavanie skoro rano, ked este cely svet spi, no pomaly sa prebera s vychodom slnka je jednym z mojich najoblubensich rannych ritualov. Cely svet sa po tichej noci prebera do dna plneho skvelej energie a stastia.

A tak isto sa menia farby okolo nas s prichodom novej sezony, tak isto som uz potrebovala tie farby aj ja. A hlavne na tanieri! S prichodom jari som potrebovala aj ja kuchynu plnu farieb, novych cerstvych chuti a osviezujucich jedal plnych zivota. To znamena mnozstvo redkviciek, spargle, cerstvych byliniek, mladeho hrasku, zeruchy, medvedieho cesnaku, jarnej cibulky, rebarbory.. jar sa hrdo pysi svojimi krasnymi farbami a prinasa novy zivot vsade okolo nas. A povedzte, kto by nechcel mat okolo seba (a hlavne na tanieri), zrazu tolko krasy?! :)

Pridajte sa ku mne, nech vas jar preberie do krasy a navarte si so mnou zdravie na tanier. Pripravte si jarny salat plny chutnych novych zemiackov, hypnotizujuco-ruzovych redkviciek, krasne zelenej spargle a jemne ostreho horcicoveho dresingu. Potom uz len salat posypte cerstvymi bylinkami a vezmite so sebou niekde na piknik, kde sa do neho pustite velikanskou lyzicou. Jar sa veru zacala nadherne. :)

 

Jarný zemiakový šalát 

1/2 kila novych zemiackov

1 zvazok krasnych redkviciek aj s listkami

hrst spargle

jarna cibulka

pazitka

 

horcicovy dresing

5 lyzic olivoveho oleja, skuste pouzit ten najlepsi aky zozeniete (a nie len teraz ale vzdy:)

1/2-1 lyzicka dijon horcice alebo podla chuti

zopar splechov jablcneho octa

stipka morskej soli

cerstvo pomlete cierne korenie

 

Najprv si uvarime zemiacky. Pod tecucou vodou ich poriadne vydrhneme kefkou alebo handrickou na zeleninu. Dame ich do hrnca s vodou tak, aby boli vsetky poriadne ponorene a dame ich varit so stipkou soli. Ked zacnu vriet, stisime plamen a varime 15-20 minut, dokym nie su uvarene. Ci su uvarene skusime pomocou ostreho nozika-po vpichnuti do zemiaku by sa mal vybrat lahucko.

Ked staci zemiakom uz len par minut na dovarenie, pripravime si sparglu. Koniec kazdej spargle si vezmeme do ruky a ohneme. Tak sa spargla ylmi v bode, kde je stonka drevnata. Naturalne :) Sparglu si premyjeme, nakrajame na vacsie kusky a vhodime na vrch zemiackov. Prikryjeme pokrievkou a ´dusime´ par minut. Skuste nevarit dlhsie, lebo stale chcete mat spraglu chrumkavu. Ta chrumkavost je to, co chceme v salate! :)

Premyte si vase redkvicky aj spolu s listkami. Redkvicky nakrajajte na tenucke platky.

Vezmite si velku salatovu misu. Ked su zemiaky vychladnute, naktrajajte ich na polovicky alebo vacsie kusy. Pridajte do misy nakrajane redkvicky a sparglu.

V miske alebo sklenej nadobke si spravime dresing. Zmiesajte spolu vsetky ingrediencie vidlickou, dokym vam nevznikne jemny dresing. Ochute a dochutte.

Dresing rovnomerne pokvapkajte po salate a rukami salat velmi jemne premiesajte. Na miesanie nepouzivajte velke lyzice, zemiacky by sa vam zbytocne popucili.

Pokrajajte si nejaku tu jarnu cibulku a pazitku a posypte nimi salat. Nakoniec pokvapkajte cely salat olivovym olejom a jemne posypte morskou solou.

Podavajte len takto jednoducho alebo s kvaskovym chlebikom a uvarenymi fazulkami.
