Have you ever dreamed about the perfect banana bread that is moist, smells wonderful and tastes like heaven? Look no further, I have got you covered! :)

We are not that family, in which there are very many ripe bananas, untouched, for days. My boy is a little monkey and going nuts for bananas is his thing. So when I need some ripe bananas, I need to buy at least 10 at the same time and hide 3-4 bananas just so I could make us this epic banana bread. So worth it! :)

I have been trying out many, many banana bread recipes until I came up with this version. Naturally sweet, indulgent, beautifully nourishing and perfect for any morning to make you warm from the inside out.

My banana bread affair has started when I was living in the USA as an exchange student (http://katyintheusa.blogspot.co.uk/) . After I finished my first class at school, my and my friends ran to the school canteen and bought ourselves slices of warm banana bread with chocolate chips. There was sugar in there and it wasn´t the healthiest thing on Earth, but we loved it. And we loved it every single morning for a year. So of course I had to come up with even better version of it, don´t you think? :)

And I believe I made my dream to come true. This bread happens to be vegan which is like a bonus. I believe you already have most of the ingredients in you cupboard already. Just make sure you will have some over-ripe bananas and that no one from the family eats before you mash them up into this loaf of heaven. You will be addicted to this. Perfect start to day on a chilly morning! :)

 

 

Banana Bread with Almond Crumble

3 very ripe bananas

1/4 cup coconut oil, organic

1/3 cup coconut milk

1 cup buckwheat flour

1/2 cup oats

1/2 cup ground almonds

2 tsp baking powder

1/2 tsp bicarbonate of soda

1 1/2 tsp ground cinnamon

pinch of ground nutmeg

1/2 tsp sea salt

1 tsp vanilla extract

2 tbs maple syrup or more (optional for a sweeter version)

 

For the Almond Crumble 

1/2 cup almonds, chopped into chunks

1 lyzica kokosoveho oleja

1 tbs maple syrup

splash of vanilla extract

1/2 tsp ground cinnamon

 

Preheat your oven to 180°C. Line a baking loaf tin with baking paper.

Mash your bananas-no need to precise here. Add them to a bowl with gently melted coconut oil, coconut milk (or milk of your choice) and vanilla extract. Mix well.

In another bowl, mix together flour, oats, ground almonds, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Add in your banana mixture and mix well.

Taste the batter and add in maple syrup for some extra sweetness if you like your banana bread sweet. Or add in extra splash of vanilla extract and some more cinnamon.

Pour the batter into your tin.

Make crumble by mixing together chopped almonds with cinnamon, coconut oil, maple syrup and vanilla. Spread evenly over the top of banana bread batter.

Stick it to the oven and bake for about 30-40 minutes until it smells amazing and the toothpick comes out clean (but still moist) when inserted into the bread.

Let cool for at least 30 minutes before slicing and enjoying this delight.

I love serving this gorgeous banana bread toasted, brushed with coconut oil and topped with berries and sprinkled with granola. I mean, this makes for a very happy morning!

Snivali ste niekedy o bananovom chlebiku, ktory je vlacny, naturalne sladky, krasne vonavy a chuti uplne bozsky? No, uz nemusite hladat nikde inde, ja pre vas recept na takyto bananovy chlebik mam! :)

Hlavnai´ingrediencia? Prezrete banany. Krasne prezrete a sladucke banany. Nic zlozite, no u nas sa to javi ako velky problem. Nie sme rodina, u ktorej by ste nasli extra banany natento chlebik, pretoze moj chlapec je ako mala opicka a na bananoch by doslova mohol zit. Takze, vzdy, ked chcem upiect bananovy chlebik, kupit musim aspon 10 bananov naraz a z toho 3-4 niekde ukryt aby som po par dnoch, ked budu uplne prezrete, tie banany vlastne mala. U vas to je snad jednoduchsie.

A ak mate teda nejake tie prezrete bananiky a neviete co s nimi, sup s nimi do chlebiku!:)

Vyskusala som uz naozaj hodne receptov na bananove chlebiky, no stale som experimentovala viac a viac, aby bol chlebik nadherne prevonany skoricou, krasne vlhky, sladeny len bananmi a aby bol pre nas viac zdravsi ako vsetky tie cukrom naplnene verzie.

Moja afera s bananovym chlebikom zacala v Amerike, kde som studovala na strednej skole ako vymenny student (http://katyintheusa.blogspot.co.uk/). Vzdy po skonceni prvej hodiny som s mojimi najlepsimi priatelkami bezala do jedalne, kde sme si kazdy jeden den kupovali to iste – cerstvy (a vzdy stale teply) bananovy chlebik s cokoladovymi kuskami, ktore sa vam rozplyvali na jazyku. Och, to bola dobrota! A aj ked sme ho mali kazde rano, nikdy sme sa ho neprejedli. Bola to laska na prvy pohlad! Urcite to nebola zdrava laska na prvy pohlad, no ta chut stala za to. A preto som to musela zmenit a vymysliet recept, ktory by bol pre telo vyzivny a zdravy. A verte ci nie, tento chlebik je vsetko to, o com som s nivala.

Naturalne sladucky a vlacny vdaka bananom, vonia po skorici a vanilke a je naozaj jednoduchy na pripravu. A verim, ze vsetky ingrediencie na chlebik mate uz aj tak doma, tak podme na to. Ak mate niekde doma (schovane?!) prezrete banany, upecte si tento bananovy chlebik. Je zdravy, zasyti, zahreje telo aj dusu cloveka, a dokonca je vegansky a bez lepku. Skvela sprava pre kazdeho!

Takze popucte nejake tie banany a sup s nimi do chlebika, ktory chuti bozsky. Par kuskov chlebika si opecte, potrite kokosovym olejom a mate pred sebou perfektne ranajky na start do noveho dna. Najlepsie chuti v chladne rana :)

Banánový chlebík s mandľovou mrveničkou 

3 prezrete banany

1/4 salky kokosoveho oleja, najlepsie organicky a lisovany za studena

1/3 kokosoveho mlieka (alebo ine rastlinne mlieko)

1 salka pohankovej muky

1/2 salky tradicnych ovsenych vlociek

1/2 salky mletych mandli

2 lyzicky prasku do peciva

1/2 lyzicky sody bikarbony

1 1/2 lyzicky mletej skorice

stipka mleteho muskatoveho orieska

1 lyzicka vanilkoveho extraktu

1/2 lyzicky morskej soli

2 lyzice javoroveho sirupu alebo viac (moze byt, no nemusi – u nas bananovy chlebik nesladim vobec, sladkost bananov v ceste uplne staci)

 

Mandľová mrvenička 

1/2 salky mandli, posekanych na vacsie kusky

1 lyzica kokosoveho oleja

1 lyzica javoroveho sirupu

1/2 mletej skorice

splech vanilkoveho extraktu

 

 

Predhrejte si ruru na 180°C. Formu na chlebik si vylozte papierom na pecenie.

V miske si popucte vase banany-nemusia byt popucene uplne na kasu, nejake tie vacsie kusky su uplne skvele. Banany potom zmiesajte s kokosovym mliekom, kokosovym olejom a vanilkovym extraktom.

V druhej miske si zmiesame sypke ingrediencie, cize muku, vlocky, pomlete mandle, skoricu, muskatovy oriesok, prasok do peciva, sodu bikarbonu a sol. Ku tejto mucnej zmesi pridame zmes bananovu a premiesame aby sa nam vsetko spojilo.

Cesto mozte ochutnat – je veganske, takze s chutou do toho, ale zase, ze vam nic neostane na upecenie! :) Ak vam je malo sladke, pridajte javorovy sirup, viac skorice alebo viac vanilkoveho extraktu. Experimentujte! :)

Cesto vylejte do pripravenej formy a spravte si mrvenicku zmiesanim posekanych mandli, kokosoveho oleja, javoroveho sirupu, vanilkoveho extraktu a skorice. Mrvenicku pekne rovnomerne posypte na vrch bananoveho chlebiku.

Chlebik pecte cca 30-40 minut, dokym nebude nadherne prevonana cela kuchyna a dokym vam sparatko, ktore vopchate do cesta, nevyjde z cesta suche, no stale vlhke.

Chlebik nehajte vychladnut aspon pol hodinku a potom sa donho s chutou pustite!

Podavajte ako je alebo ako ja. Opeceny, potrety kokosovym olejom, posypany nejakym tym ovocim a posypany granolou. Po takychto ranajkych musi byt svet tym nakjrajsim! :)
