Morning Parfait with Apple and Carrot Crunch. Raňajkový Parfait s chrumkavým jablkom a mrkvou.

 

This is what I munch on every single year in autumn when my life gives me plenty of apples. I remember my mum and my grandma eating this when they wanted to nourish themselves with some clean breakfast. Grated apple, grated carrot, walnuts, some lemon juice and maybe a bit of honey. Even my great grandma is a fan of this salad – when a doctor tells her to eat more of clean meals, this is what she would munch on after every meal instead of having a dessert. And yes, let me tell you, that to me, this is far tastier than any dessert!

And because I got 3 kilos of gorgeous hand-picked apples in my veg and box delivery as a gift, this is a must for me. I complimented my farmer with beautifully tasting apples and the next week, I was standing in front of my door, receiving a gorgeous organic veg box with 3 kilos of apples on top of it. Just because they wanted me to try out different varieties they grow in they farm. My heart melted, my belly growled and I jumped out of excitement. Forever grateful for people that make me smile.

With plenty of vitamins and nutrients, this breakfast will help you to fight off any illnesses, colds, flues and bacteria. Buckwheat is warming, ginger is anti-inflammatory, almonds are packed with protein and vitamin E to keep your skin glowing, and carrots and apples are amazing sources of fibre, vitamins and minerals. Bee pollen adds extra proteins, sweetness and beautiful colour to it all and walnuts keep things nice and crunchy. And they will please your brain as well. So all together, there is an amazing amount of natural goodness in this parfait, so get munching on this!

And remember, that 70% of our immune system is in our ´gut´ so feed it well. :)

Morning Parfait with Apple and Carrot Crunch

(serves 3-4)

1 cup buckwheat (or oats of your choice), soaked overnight in cold water with a splash of apple cider vinegar and then rinsed
1/2 cup almonds, soaked overnight with pinch of salt, rinsed and de-skinned
2-3 large apples
1 large carrot (or 2 medium carrots)
big chunk of ginger
1 lemon
1 tsp cinnamon (or more to taste)
about 1/4 cup plant based milk – I use my beloved friend – coconut milk
honey to taste (optional)
tahini, hazelnut buter
walnuts, lightly toasted
bee pollen

Rinse together your sokaed buckwheat and almonds. You can leave the skin on almonds, or for better digestion, de-skin them. The skin should come off easily from the almonds when slipped through your thumb and finger. If this seems like a challenge for the almond, it means that your nuts have been heat treated.
Put the buckwheat, almonds, cinnamon and one chopped apple into a blender. Blend on high, add some lemon juice and milk to thin it out to desired thickness. Taste and add whatever you would like there to be. Honey, more cinnamon, any of the superfood powders people go crazy about :) , more apple.. Once happy with the mixture, divide it into jars or glasses. Put spoonfuls of nut butter on top of the cream to create a nice layer.
Grate ginger, carrot and the remamining apple (or apples). Mix together with some lemon juice to prevent the apples from browning and not looking sexi. Taste and adjust to your liking. Honey maybe? More ginger? More apple? You are the boss.
Divide the apple and carrot mixture in between your jars. Topped with toasted walnuts, beepollen. Enjoy. Because you can never have too many apples in autumn! :)

 

Toto je presne to, na com si pochrumkavam kazdu kazdulinku jesen, ked ma zivot obdaruje velkym mnozstvom krasnych jablcok. Pamatam si, ako podobny salat z jablcok, mrkvy, citronovej stavy a orechov jedla moja mamina so starkou, ked sa citili na ´ocistu´ tela. Na rano si teda nastruhali ovocie a zeleninu a pri stole nad tym vsetkym mnamkali a chrumkali. Ba dokonca aj moja babka si nieco podobne pripravovala, ked jej doktorka nakazala jest lahsie a zdravsie jedla. A potom davajho, za kazdym jedlom misticka takehoto mnamkoveho salatu ako dezert. A poviem vam, chuti mi to viec ako hociktora ina torta!

A kedze som dostala vo svojej debnicke organickej zeleniny a ovocia aj 3 kila jablk od farmarov, bol cas na tento salatik aj pre mna. Pochutnavam si na nom skoro kazdy den, nieco tak jesenne mi naozaj chybalo. Nemyslite si, ze je normalne dostavat s donaskou ovocia a zeleniny aj 3 kila jablk, to nie. Ale, kedze som farmarom napisala mail, kde som im pochvalila ich uzasne jablcka, ktore som mala v debnicke uz minuly tyzden, dostala som od nich darcek-poslali mi na vyskusanie ´trosku´ jablcok, ktore osobne nazbierali pre mna zo zeme. Ked som si prevzala zasielku ovocia a zeleniny ako je tomu kazdu stredu a videla tam jablcka a mail k nim prilozeny – tvar sa mi rozziarila, srdce zastalo od stastia,  v bruchu mi zaskvrkalo a cele telo podskocilo – som vdacna ludom, ktory ma dokazu potesit takouto malickostou. A tie jablka su uplne famozne, len tolko vam k tomu poviem.

S velkym mnozstvom vitaminov a zdraviu prospesnych latok, vam tieto ranajky pomozu bojovat proti kazdej chorobe a kazdemu virusu, co sa okol vas pohne. Pohanka nam zahrieva telo, mandle su  perfektnym zdrojom proteinov hned z rana, s ich obsahom vitaminu E nam bude pokozka krasne ziarit. Zazvor je protizapalovy a taktiez zahrieva, jablcka a mrkva su plne vlakniny a vitaminov. Vceli pel je krasnym zdrojom proteinou, ktory cely parfait dozdobi spolu s posekanymz vlasakmi. Tym sa potesia ak nase oci, tak nase mozgove bunky. Takze vsetko dokopy je naozaj zdrava bomba, ktora caka, kedy sa do nej pustite.

A pamatajte si, ze 70% imunitneho systemu nam lezi v zazivacom trakte, tak pekne a zdravo si ten imunitny system krmte. :)

Raňajkový Parfait s chrumkavým jabĺčkom a mrkvou

(3-4 porcie)

1 salka pohanky (alebo vlociek podla vyberu) namocenej vo vode so splechom jablcneho octu a nasledne rano premytej
1/2 salky mandli, namocenych vo vode so stipkou soli, rano premytych a olupanych
2-3 vacsie jablka
1 velka mrkva (alebo 2 stredne)
poriadny kus zazvoru (moze byt olupany, no nemusi)
1 lyzicka mletej skorice
cca 1/4 salky rastlinneho mlieka (ja pouzivam mojmu srdcu blizke kokosove mlieko)
1 citron
med na dochutenie
tahini, maslo z liezkovcov alebo inych orieskov
jemne opecene vlasaky
vceli pel

Rano si premyjeme namocenu pohanku a mandle. Mandle osupeme (nemusime, no pre lepsiu stravitelnost odporucam). Ak sa vam daju mandle osupat velmi lahko – supka sa od mandle odlupne po stlaceni orieska medzi palcom a ukazovakom, znamena to, ze orech nebol po zbere nijak tepelne upravovany. To je dobre, je surovy. :)
Vlozte do misky pohanku, mandle, skoricu a jedno na kusy nakrajane jablko. Ponornym mixerom vymixujte do hladka. Na zjemnenie kase pridajte vami zvolene mlieko a par kvapiek citronovej stavy. Ochutnajte, dochutte podla chuti. Pridajte med ak chcete, alebo viac skorice, mozno viac citronovej stavy. Porozdelujte do poharikov alebo flasticiek. Na vrstvu kase pridajte vami zvolene orieskove maslo- zopar lyziciek (v mojom pripade to boli lyzice:).
Nastruhajte si zazvor, mrkvu a zvysne jablcko (alebo jablcka). Zmiesajte to vsetko spolu s troskou citronovej stavy, kvoli chuti a aby postruhane jablcka vyzerali stale sexi a nezhnedli. A ak chcete, dochutte aj troskou medu. Alebo pridajte viac zazvoru, viacej jablcka, viacej mrkvy. Je to na vas, vy ste sef! :)
Rozdelte vasu jablckovu krasu medzi pohare s kasou a sem tam si trosku hodte aj do ust – ja som takto ´kostovala´salat kazdu minutu – ci nahodou nezmenil chut alebo tak. :)
Vrch parfait posypte troskou vcelieho pelu a posekanymi vlasakmi. S chutou sa pustite do chrumkania jablk – v jeseni ich nie je nikdy vela! Na zdravie!
