Very Creamy Blackberry Popsickles. Krémovo-krémové nanuky s černicami.

 

I was waiting. I was patiently waiting for that moment when I will be able to pick fresh blackberries from a bush with my own hands. I was able to find a place where it is just bursting with these dark beauties. Since then, I have been secretly spending my mornings wondering around park with a little basket that I always manage to fill up. And by the time I get home, the basket it´s half empty, my fingers are black,my lips are purple and even though I am soaking wet because of the heavy morning showers, it doesn´t stop me from getting beautiful blackberries almost every morning.
They seem to appear in every meal I eat. They are lovely on top of my morning bowl of soaked grains and nuts, they make a wonderful partner to leafy greens in my smoothies, they are beautiful in salads and irresistible in crumbles and crisps.

I was waiting a year for sharing this easy, cooling and delicious recipe with you guys so I could use that beautiful, seasonal berry fruit. Blackberries!

The beauties are packed with numerous plant nutrients such as vitamins, minerals, anti-oxidants. They are rich in fibre, both soluble and insoluble. They are an excellent source of vitamin C – only 1 cup covers 40% of your daily requirements of this vitamin. The antioxidants in blackberries (and berries in general) help our body to fight against free radicals that damage our cells.
They taste best when picked in season (obviously) so go wild, pick as many as you are offered, freeze them and enjoy them all year around.

I have a little confession to make. I know that half of the world will shake their head, but anyway. I don´t like popsickles. I will gladly enjoy scoops of proper Italian gelato when in Italy, but ice lollies? Not for me.So after browsing beautiful foodblogs on Internet, I got inspired. At first I made the creamiest yoghurt pops with roasted balsamic strawberries and greek yoghurt. And let me tell you, that was something. It was creamy, luscious and delicious. Nothing like normal lollies. And then I created this nourishing version using coconut milk, banana, some nut butter and blackberries. The result? Oh yeah! Even creamier than with greek yoghurt (which is hard to beat) and just.. beautiful. And satisfying.

So, today, I want you to enjoy that lovely blackberries lightly mashed and stirred through the creamiest posickles with hints of hazelnut butter. No refined sugar, no dairy. Your digestive system will smile and you will have something cold to cool you down through some serious heat waves. And because people in Slovakia are experiencing some very, very unbearable high temperatures this summer, this post is dedicated to them. Stay cool and refresh yourself with these super creamy lollies. :)

Very Creamy Blackberry Popsickles

(makes around 4-6, depending on the size of your lolly moulds)

1,5 cups coconut milk (always organic and full-fat)
1 very ripe banana (could be frozen as well)
a few squeezes of lemon juice
4 tablespoons of nut butter (peanut butter and hazelnut butter works the best)
big hanful of blackberries (or other beautiful seasonal fruit)

Blend together milk, banana, lemon juice and nut butter. If you are using chunky nut butter, you could gently heat it up and stir it through to leave some crunch to it.
Mash 1/2 of your blackberries with fork and gently mix with the whole ones. Gently fold through your banana mixture.
Fill your lolly moulds with this beautiful coco-berry mixture and out to the freezer. After about 15 minutes, take them out and stick your stick into the middle of each lolly. Let freeze overnight or for at least 4 hours.
When ready to snack on them, hold the lolly mould under running water (warm water) for about 10 seconds and gently take it out. Enjoy on a hot summer day. Or whenever, really. :)

Cakala som. Trpezlivo som cakala na ten moment, ked sa budem moct vybrat do lesa a vlastnymi rukami si odtrhnut nadherne cernice, ktorymi sa hemzia vsetky kriky v nedalekom parku od nasho bytu.  Odkedy som nasla to carovne miesto preplnene nadhernymi tmavymi kraskami, odvtedy som potajomky travila studene rana zbieranim ich. Potajomky sa vykradnem z domu v cizmach, cela som zabalena v prsiplasti a v jednej ruke mam dazdnik a v druhej si drzim misticku, ktoru vzdy naplnim. Dokym pridem domov, tak z nej vzdy polovica cerniciek ubudne, ruky mam zrazu fielove a pery modre od vychutnavania si tolkej dobroty. A aj napriek tomu, ze domov sa vzdy vratim maximalne premocena vdaka rannym sprcham, neodradi ma to od toho, aby som si uzivala tento krasny, fialovy a sladucky dar prirody skoro kazde rano.

Cernice sa v tuto dobu objavuju v kazdom mojom jedle ako ten najlepsi kamart vsetkeho, na com si pochutnavam. Hrdo si lebedia navrchu mojej rannej kase v chladne rana, perfektne sa vezu ruka v ruke v ranajkovych smoothies spolu s kadejakymi zelenymi listami, ktore na mna kyvaju z chladnicky a snad najlepsie chutia upecene v crumble s tou najchrumkavejsou orieskovou posypkou.
Presne rok som cakala, kedy sa s vami budem moct podelit o prave tento recept. Lahky na pripravu, nutricne bohaty (to je samozrejme), uspokojivy pre dusu, chladivy pre telo a napchaty tymi krasnymi sezonnymi bobulkami –  cernicami! :)

Tie tmave krasky su preplnene roznymi dolezitymi nutrientmi ako vitaminmi, mineralmi a antiooxidantami. Su bohate na vlakninu a su vybornym zdrojom vitaminu C – uz 1 salka tych bobuliek vam posyktne 40% dennej odporucenej davky tohto vitaminu. Antioxidanty v cerniciach (a inych fajnych bobulkach) pomahaju nasmu telu bojovat proti volnym radikalom, ktore poskodzuju nase bunky.

Samozrejme, najlepsie chutia cernice cerstvo odtrhnute, ked su v sezone, no ak ich nazbierate a zamrazite, vychutnat si ich mozete po cely rok. Alebo aspon dovtedy, dokym sa vam neminu zasoby! :)

Musim sa vam priznat. Po tom, co poviem, bude nadomnou asi kazdy kyvat hlavou, ale znesiem to. Nemam rada nanuky. A zmrzliny. Gelato je vynimka, ale tiez musi byt take prave talianske z Talianska. Ale nanuky mi nikdy nebrali. Takze po tom, co som prekutrala kadejake krasne foodblogy, bola som inspirovana. A zacala som experimentovat. pecene jahody s balsamikom, kralovsky zamrznute vo forme na nanuk spolu s uzasne kremovym greckym jogurtom. A to teda bolo nieco. Nieco uzasne! Bolo to uzasne kremove, plne krasnej letnej chute a uplne na neodolanie. Vobec nie take ako tie kupenske. Po dalsich experimentoch som prisla s jednoduchym napadom na uzasne lahodne a kremove nanuky, ktore su bez hocijakeho rafinovaneho cukru a dokonca si na nom mozu pochutnavat aj vegani! Kokosove mlieko, banan, nejake to orieskove maslo a samozrejme cernice. A vysledok? Oh, nieco neodolatelne! Este kremovejsie ako pri pouziti greckeho jogurtu (ktory je tazke porazit!). Uplne nadherne. A maximalne uspokojive.

Takze dnes chcem, aby ste si tie cernicove fesandy vychutnali trosku popucene a jemne vmiesane do krasne zamatovej kokosovej ´plnky´ s delikatnou chutou lieskovcoveho masla. Bez cukru, bez mlieka.Kremovejsie ako nikdy predtym. Vas traviaci system sa potesi a telo sa konecne schladi po tych letnych horucavach, ktore muselo tak bravurne zvladat. Tento recept je pre vsetkych Slovakov, ktorych tie horucavy tak trapia. Zostante len pekne v chladku a pochunajte si tejto kremovej lahode. :)

Krémovo-krémové nanuky s černicami

(na cca 4-6 nanukov, zalezi na velkosti formiciek, ktore pouzivate)

1,5 salky kokosoveho mlieka (jedine plnotucne a organicke)
1 banan, pekne dozrety (ak mate, mozte pouzit aj zamrznuty)
par crkov citronovej stavy, podla chuti
4 lyzice orieskoveho masla (najlepsie chuti lieskovcove alebo arasidove)
velka hrst cernic (alebo ine skvele sezonne ovocie)

V mixeri si sopolu vymixujte mlieko, banan, citronovu stavu. Pridajte orieskove maslo, premiesajte. Ak chcete mat nanuky naozaj super kremove, vymixujte do hladka mlieko spolu s orieskovym maslom. No ak si chcete trosku zachrumkat, maslo jemne ohrejte v kastroliku a potom vmiesajte ku kokosovo-bananovej hmote.

Na tanieri si jemne popucte asi polovicku cernic (pouzite vidlicku) a spolu s ostatnymi ich s laskou vmiesajte do kokoso-bananovej lahody. Naplnte si vase nanukove misticky, dajte do mraziaka a po asi 1/2 hodine do stredu kazdeho nanuku vopchajte palicku. Nechajte v mraziaku najmenej 4 hodiny, no najlepsie je cez noc.

Ked si chcete nanuk vychutnat, jednoducho len podrzte vasu nanukovu formicku pod prudom teplej vody asi 10 sekund a pomaly vytiahnite za palicku. Dobru chut a na schladenie! :)
