Chilled Coconut Pudding. Chladený kokosový puding.

 

 

Hot summer days, when the air just doesn´t move. You are breathing in the beautiful sunshine and after a long day of laughter and summer lovin´, your heavy body hit that cooling bedding sheets. You leave your window opened the whole night. And then you wake up to the little cooling breeze that tickles you on your feet.

Your belly start to moan, your head starts to spin around beacuse you are in a need for something refreshing, something that cooles you down nicely and something that nourishes you inside out.

Although we are not experiencing many hot summer days in England these days, I am happy for at least a few of them. And when they come, it´s a pleasure to enjoy them with my whole self. And when I wake up to such a lovely, beautiful and warm morning when the sun is just setting up on the sky, I love sneaking into our fridge, grabbing a chilled glass filled with cooling cardamom and coconut rice, mashing up a few strawberries to put on top, dolloping it with hazelnut butter and crowling back into bed. Then I quietly enjoy spoon by spoon while watching my boy sleeping peacefully and listening to the birds which are waking up the whole neighbourhood into a new and beautiful day.

Chilled Coconut Pudding

This recipe is easy to make, and you can use any leftover cooked grain you have on hand. Brown rice works really great and so does quinoa, millet, buckwheat and even barley. Also, you could use other seasonal fruit, maybe some mango puree as well. I just love the combination of cooling cardamom and beautiful strawberries. Experiment and enjoy.

1 1/2 – 2 cups of cooked grain
2 cups of coconut milk, or more if needed (you could use some water to make it less thick)
1 vanilla bean, seeds scraped
4 cardamom pods, seeds freshly ground in a pestle and mortar
1 tsp of honey or maple syrup (optional, but nice if you like sweet things)
tiny pinch of sea salt
handful of strawberries
small handful of hazelnuts
a couple of tablespoons of hazelnut butter

Put your leftover grain in a pan with coconut milk, vanilla pod and its seeds, crushed cardamom seeds and a pinch of salt. Put over a medium heat and cook until thick and creamy. This could take something around 10-15 minutes, depending on your grain. If you´ll think that the pudding is becoming too thick, just mix in some more milk or water. Turn off the heat and let it sit for a while. Taste and adjust the sweetness.

Divide the grain ´porridge´ into 2 tall glasses and put it to the fridge until ready to serve or cold. The best thing is to put it to the fridge before going to bed, top it up in the morning and enjoy it for breakfast. Or, you can still eat it warm. :)

When ready to serve, toast your hazelnuts. Rub some of their skin off. Clean your strawberries, mash them roughly with a fork. Put in a pan with all their juicesand cook until thick for a few minutes. Dollop the cooled grain pudding with hazelnut butter, yummy and thick strawberries and crushed toasted hazelnuts.

Enjoy with a big spoon on a hot morning. And in bed, to be exact.

Okno do izby je celu noc otvorene. A nad ranom vas jemne postekli chladivy vanok.

Vase brusko sa preberie spolu s vami a prosika vas o nieco uzasne lahodne, chladive a osviezujuce. Nieco, co vas pohladi navonok i zvnutra.

Aj ked u nas v Britanii nemame horucavy kazdy den, som stastna aspon za tych par, co sa k nam neocokavane priplazia. A ked konecne pridu, je to uplna slast, vychutnavam si ich od hlavy az po paty. A ked sa prebudim to takeho krasneho a horuceho rana, ked si slnko iba hlada polohu na oblohe, zboznujem sa potmehucky priplichtit ku nasej chladnicke, vytiahnut z nej vychladeny kremovy kokosovy puding, navrstvit nan popucene jahody, posypat orieskami a s velkou lyzicou sa vratit do postele. A potom si uz len vychutnavam lyzicu po lyzici popri tom, ako moj chlapec krasne spi a popri zvuku vtakov, ktore pomaly ale isto preberaju cele mesto do krasneho nove dna.

Chladený kokosový puding

Tento recept je naozaj velmi lahke pripravit, pretoze mozete pouzit hocijaky druh uvarenej obilniny, ktoru mate v chladnicke. Velmi dobre sa tu hodi hneda ryza, quinoa, pseno, pohanka a ba dokonca aj jcmenne krupky. Taktiez mozte pouzit aj ine sezonne ovocie, alebo si to viem predstavit aj s magovym pyre. Ja mam naozaj velmi rada kombinaciu osviezujuceho cardamomu a krasnych dozretych jahod, vyskusajte to aj vy. Alebo experimentujte co vam hrdlo raci! :)

1 1/2 – 2 salky uvarenej obilniny
2 salky kokosoveho mlieka (alebo viac podla potreby, no mozte pouzit aj trochu vody)
1 vanilkovy struk, semiacka vyskrabkane
4 kardamomy, zrniecka vybrate a cerstvo popucene v maziariku na prasok
malicka stipka soli
1 lyzicka medu na trocha sladkosti (ja tento puding vobec nesladim, nakolko nam kokos chuti sladko, ale pre velmi sladkych odporucam! :)
hrst jahod
mala hrst lieskovcov
par lyzic lieskovcoveho masla (maslo z lieskovcovych orechov-mnam!)

Do hrnca si dame nasu zvysnu uvarenu obilninu, pridame kokosove mlieko, vanilkovy struk spolu s vyskrabkanymi semiackami, kardamom a stipku soli. Privedieme do varu a varime, dokym nam nevznikne husta a kremova kasicka. Malo by to trvat okolo 10-15 minut, no to zalezi na druhu obilniny, ktoru pouzivate. Ak sa vam bude zdat, ze pudink je prilis husty, pridajte trosku viac mlieka alebo vody. Odstavte z ohna a nechajte chvilku postat. Ochutnajte a podla potreby dosladte.

Puding si rozdelte do dvoch vysokych poharov a vlozte do chladnicky, dokym nan nebudete mat chut alebo dokym uplne nevychladne. Najlepsie je nechat puding v chladnicke cez noc a vychutunat si ho rano, celkom vychladnuty.

Ked ste pripraveny podavat a chutnat, vidlickou si popucte jahodky a dajte si ich do malickeho kastroliku. Privedte do varu a varte par minut, dokym nezacnu byt jahodky huste. Na suchej panvici si oprazte lieskovce a po opeceni z nich trosku osupte ich supku. Ta niekedy moze chutit horko.
Na vrch vasho kokosoveho pudingu si dajte par lyzic orieskoveho masla, pridajte vase povarene jahody, posypte oprazenymi a posekanymi lieskovcami a mate hotovo.

Podavajte s velkou lyzicou v horuce rano. Najlepsie chuti v posteli.
