Grilled grapefruit on toast. Grilovaný grep na toaste.

 

Variety is the spice of life. And that is the reason why I almost never stick to the same breakfast. I always try to get creative in the morning and put in front of me a meal, that´s flavoursome with different textures, spices, flavours. Breakfast where I experiment with different grains, seeds, nuts, oils, fruit, vegetables.. Even the cooking technique changes almost every day – sometime I bake my granola, then I would cook myself the creamiest porridge, other time I would blend soaked buckwheat with some fruit, or I would have a blended kefir (cultured fresh milk) with berries, topped with some crunchy nuts..or I would have this. Beautifully grilled grapefruit on a piece of toasted sourdough bread, served with plenty of black pepper. And I often sneak in big dollops of nut butter, too.. I simply love my mornings. If there is a one thing I couldn´t live without every day, it would we breakfast. I am serious, it is my thing. Every night I go to bed I can´t wait to fall asleep so I could wake up in the morning, drink some nice tea, do yoga and have glorious and nourishing breakfast.

Grapefruit is a citrus fruit, very high in vitamin C, which helps to reduce inflammatory conditions. Citrus fruits also keep our digestion tract healthy and happy and regular consumption of these fruits can cut the risk of heart disease, kidney stones and all kind of infections.  Grapefruit contains enzymes which help the liver break down toxins that accumulate there. If you buy organic citrus fruit, use the peel of it as well, as it contains high amount of antioxidants that fight against free radicals.

Black pepper has a wealth of health benefits – it aids digestion, is antibacterial, antifungal and anti-inflammatory. Always buy whole pepper corns and grind them yourself -freshly ground black pepper tastes hundred times better than ready ground pepper.

Sourdough bread is a star between all breads. I can´t stress enough how delicious and healthy this kind of bread is. The living cultures in sourdough partially break down gluten and makes it easier for our body to digest it. This kind of bread cleans up blood (your skin will shine!), it helps people to overcome bloating and constipation. It is the only bread we eat in our house and I hope we will never go back to shop bought version. Once you try it, you don´t want to get back to the commercial stuff.

Grilled grapefruit on toast

(serves 2)
4 big pieces of proper sourdough bread (I love using rye for this combo)
1 pink grapefruit
almond or hazelnut butter, tahini (sesame paste) or any nut or seeds butter you like OR some of your favourite cheese (goat´s is beautiful)
olive oil, freshly ground black pepper
honey and fresh thyme leaves, to taste

Preheat your grilling pan or preheat your oven to 200°C.
Peel your grapefruit (or cut the peel with a knife if too lazy) and cut into slices that are not too thin nor too thick.
Grill your bread until golden brown and crunchy. If you don´t own a grilling pan, do so in the oven.
Lightly drizzle your grapefruit slices with olive oil and grill on each side, flipping them over very gently. If you want to do so in the oven, put them on a baking tray lined with baking paper, drizzle with olive oil and bake.
Top each piece of toast with generous dollop of nut butter or goat´s cheese, top with grilled grapefruit slices, top with plenty of black pepper and drizzle with honey. Sprinkle with fresh thyme leaves (especially if using cheese on your toast). Smell the masterpiece with your eyes closed and enjoy it proudly.

Rozmanitost je korenim zivota. A to je jeden z dovodov, preco skoro nikdy nemavam tie iste ranajky. Rada si robim rana tak zaujimave ako to len ide a pokusam sa byt kreativna zakazdym, ked si pred seba polozim svoje ranajky. Menia sa mi na tanieri chute, vone, ovocie, zelenina, rozne druhy orieskov, semiacok, zdravych olejov, rozlicnych obilnin a plodin..Taktiez obmienam aj sposob upravy jedla-niekedy mam pecenu granolu, inokedy varenu ranajkovu kasu, vymixovanu pohanku do kremova s nejakym ovocim alebo vymixovany kefir s bobulkovitym ovocim, ktory slavnostne posypem chrumkavymi orieskami.. alebo si ogrilujem platky ruzoveho grapefruitu, poukladam si ich na jemne opeceny kvaskovy chlebik, riadne to pokorenim..a vacsinou sa mi medzi chlebik a grep vopcha aj hromada orieskoveho masla.. Jednoducho zboznujem rana. Keby som si mala vybrat jednu vec, bez ktorej by to neslo, boli by to ranajky. Ked sa vecer ukladam do postele, neviem sa dockat kedy zaspim a pride opat nove a uzasne rano, kedy sa zobudim, zalejem si caj, zacvicim jogu a vrhnem sa na uzasne ranajky plne chuti.
Nebojte sa tej kombinacie grepu a cierneho korenia; korenie vyzdvihne uzasnu citrusovu chut grepu do vysin a ked si to vsetko posypete tymianovymi listkami a pokvapkate perfektnym domacim medom, je to slast.
Teraz v lete sa chladive vlastnosti grepu naozaj zidu, kto by len mal chut na zdlhave varenie ranajkovej kase, ked sa do kuhyne snazia vtrhnut horuce luce slnka? Ved prave. STaci zapnut gril alebo grilovaciu panvicu a peceny grep si zamilujete. Skvele sa hodi aj ako dezert po grilovacke, ked mate rozhoruceny gril alebo pahrebu. Grep alebo pomaranc vam vycisti ´paletu´, schladi vas a osviezi. Dobru chut!

Ake su vase oblubene ranajky v tieto dni? :)

Grep je citrus velmi bohaty na vitamin C, ktory pomaha redukovat protizapalove ochorenia v nasom tele. Citrusove plody taktiez udrziavaju nas traviaci trakt stastny a zdravy a dokonca pravidelne konzumovanie tychto plodov znizuje riziko vzniku oblickovych kamenov, srdco-cievnych chorob a kadejakych moznych zapalov a infekcii. Grep obsahuje enzymi, ktore pomahaju peceni pri rozklade toxinov, ktore sa tam postupne zhromazduju. Ak sa vam podari kupit organicke citrusy, pouzite aj koru z nich, pretoze aj ta obsahuje mnozstvo antioxidantov, ktore bojuju proti volnym radikalom.

Cierne korenie ma uzasne zdraviu prospesne benefity. Pomaha pri traveni, je antibakterialny a protizapalovy. Vzdy sa snazte zakupit si korenie cele a pomelte si ho sami doma v mlynceku na korenie-ta chut sa s hotovym pomletym korenim neda ani porovnat.

Kvaskovy chlebik je ako hviezda na nebi medzi ostatnymi chlebmi. Nedokazem ani riadne prizvukovat akychutny a zdravy je takyto druh chlebika. Zive bakterie v kvaskovom chlebiku pomaly rozkladaju gluten v muke a chlieb sa stava lahsie stravitelnym. Takyto druh fermentovaneho chlebika nam cisti krv (preto nasa pokozka tak ziari!), pomaha ludom zbavit sa zapchy a plynatosti. Kvaskovy chlebik je jediny, ktory u nas byva a verim, ze ku kupovanemu komercnemu chlebiku sa uz nebudeme musiet vratit. Verte mi, ze ked ho ochutnate na vlastne kozi, len tazko sa vam bude vracat ku pecnu z obchodu.

Grilovaný grep na toaste.

(porcia pre 2 hladnych)
4 poriadne krajce kvaskoveho chlebiku (mne ku grepu velmi chuti razny chlieb)
1 ruzovy grep
mandlove alebo lieskovcove maslo(z danych orieskov), tahini (sezamova pasta) alebo ine orieskove maslo alebo pouzite nejaky paradny, slankasty syr (kozi je top!)
olivovy olej, cerstvo zomlete cierne korenie
med a cerstvy tymian (podla chuti)

Rozohrejte si grilovaciu panvicu (alebo si zapnite ruru na 200°C).
Osupte si grep (alebo ho nozikom obkrojte) a nakrajajte ho na kolieska.
Na grilovacej panvici alebo v rure si opecte chlebik do chrumkava. Grep jemne pokvapkajte olivovym olejom a opecte na grilovacej panvici z oboch stran – s grepom pracujte velmi jemne ak ho grilujete na panvici. Mozete ho aj opiect v rure, staci ak si plech na pecenie vylozite peciacim papierom, kolieska grepu nan poukladate, pokvapkate olivovym olejom a upeciete pod grilom.
Opeceny chlebik natrite hrubou vrstvou vasho oblubeneho orieskoveho masla (alebo aj jemnym kozim syrom), poukladajte nan platky ogrilovaneho grepu, poriadne okorente cerstvo zomletym ciernym korenim a podla chuti pokvapkajte medom. Hotovu hrianku posypte listkami tymianu(hlavne ak ste si na chlebik poukladali syr) a s chutou sa pustite do chrumania.
