Birthday Cake with maple syrup and creamy coconut filling. Narodeninová torta s javorovým sirupom a kokosovým krémom.

Since I´ve moved out of my mom´s house and since I´ve starting living with my boy all around the globe, I kind of stopped celebrating birthday. There is no reason for it, really, I just stopped.

My birthday is on the 11th of July. My boy´s birthday is on the day before, which is the 10th of July. Yes, it is quite a crazy coincidence. I have always enjoyed suprising him on his birthday. Whether it was organising a big surprise party with everyone he loves for his sweet 20th birthday, whether it was singing happy birthday to him while holding tons of baloons in one hand and sky-high stack of pancakes with candles on top in the other hand or whether it was giving him a scrapbook of our memories, which my whole family helped me create..Simply, I love making him happy on his special day, I love the smile on his face when something that I´ve been planning for months with his friends finally happens and he is speechless. I do enjoy surprising him, especially when he surprises me every day we spend together.

I then I never really care about my birthday that happened to be on the following day, I just didn´t want the attention. But that had to come to an end. And this year, we gave each other the best present of all time. The time. We ran away to Cornwall together and spend almost 3 days staring at each others eyes with love, kindness and happiness. And then I went crazy with baking us this amazing birthday cake. Yes, we got to blow the candles together and so what, that it was 5 days after our birthday?! .. We deserved a cake. We deserved something special, over the top cake that says, love me, eat me and enjoy me. So we did! And, it was hell of a cake! With its gentle and elegant appearance and with its rocking flavours, it was like a dream on our plates.

It is a completely vegan cake, but no one can tell. So keep it as a secret for all the ones who can´t hear about food labeling. Actually, I dont like food labeling either. So lets just say that this cake is for everyone. And everyone will love it.

The layers are baked with spelt flour and are flavoured with pure maple syrup and vanilla bean. The filling is super creamy, made using creamed coconut, coconut milk and just a touch of local honey and vanilla seeds. I am telling you, this cake will fool even the biggest junk eater. It is refind flour free, refined sugar free so it is much easier on our whole digest system. It is nourishing and delicious.

Birthday Cake with maple syrup and coconut cream filling
(this recipe yelds 1 cake, so if you want to make the cake as it appears on the picture, simply double the recipe)
2 cups wholemeal spelt flour
2 tsp baking powder
1/2 tsp baking soda
pinch of sea salt
4 tbs coconut oil, melted and cooled
1/2 cup pure maple syrup
1 cup plant milk (I used ready-to-drink coconut milk; not the one from a can)
1/2 vanilla bean, seeds scraped
1 tsp apple cider vinegar

Preheat your oven to 180°C. Grease one smaller round baking tin with some coconut oil and line the bottom of the tin with baking paper.
Mix together flour, baking powder, soda bicarbonate/baking soda and salt.
In a small bowl, mix together maple syrup, coconut oil, milk and scraped vanilla seeds. Make sure your milk is not cold, otherwise the coconut oil will harden.
Gently mix the wet ingredients into the dry flour mixture until you get rid of all the lumps. Quickly whisk in 1 tsp of apple cider vinegar and pour the batter into the prepared tin. If there are bubbles visible on the surface, simply take the tin in your hands and let it fall on your worktop.
Put it to the oven and bake for about 30 minutes, until the toothpick inserted comes out clean.
leave the cake in the tin for about 10 minutes, then removeit from the tin and let it cool on a wirerack. You can even bake the cake one day ahead and store it in the fridge.
Coconut cream filling
2 cans of organic, full-fat coconut milk, refridgerated overnight
or
1 bar of creamed coconut
1-2 tsp set honey
vanilla seeds, scraped from 1/2 vanill bean
Open the cans of coonut milk. Scoop out the fat layer and put it to a chilled bowl. Mash it up with a fork and then using a whisk, whip it up until you will end up with whipped cream. (If using creamed coconut, whisk it up and start adding coconut milk until desired consistency.) Add honey and vanilla seeds and put to the fridge until needed.

When you are ready to assemble the cake, carefully cut the cake into 2 halves. You can drizzle the cake with some liquer or rum, it gives the cake a very nice aroma and flavour. Spread about 3 tablespoons of the coconut cream on the layer. Cover with cake and repeat. Decorate and enjoy the feeling of being do damn talented! Enjoy.

Odkedy som sa odstahovala z rodneho domu a odkedy som zacala zit s mojim chlapcom kade tade po svete, nejako som prestala oslavovat narodeniny. Nemam k tomu ziadny specialny dovod, jednoducho to nejako prislo.

Narodeniny oslavujem 11teho jula. Moj chlapec oslavuje jeden den predomnou, 10teho jula. Co je dost sialena nahoda, nemyslite? :) Vzdy som si uzivala, ked som ho mohla na jeho narodeniny potesit s nejakym prekvapenim o ktorom vzdy vedeli vsetci, len on nie. O to lepsie prekvapenie! :) Ci to bolo zorganizovanie chaty na jeho sladke 20te narodeniny s ludmi, na ktorych mu najviac zalezi, ci to bolo spievanie ´vela stastia, zdravia´, kedy som ho zobudila s tym ako som v jednej ruke drzala tonu balonov a v druhej ruke vysoku palacinkovu vezu, kde boli zapichnute sviecky alebo ci to bol moment, ked som mu dala na narodeniny spomienkovy album o nas dvoch, s ktorym mi pomahala cela rodina..

Jednoducho zboznujem vycarovat usmev na tvari mojho chlapvoci presne vtedy, ked to najmenej ocakava, alebo ked vlastne ani nevie ci ma ocakavat nieco, co sa zrodila v mojich sialenych myslienkach a javi sa to ako uzasny napad. :) Zboznujem, ked mu mozem pripravit oslavu so vsetkymi jeho kamaratmi a zanecha ho to bez slov; zboznujem, ked ho mozem prekvapit, hlavne ked ma prekvapuje on, svojimi skutkami a slovami kazdy jeden den co sme spolu.

A tak som svoje narodeniny vzdy presunula na vedlajsiu kolaj, nikdy som moc o tu pozornost nestala. Ale, to sa muselo skoncit. Kazdy si zasluzime trochu niecoho extra. A tak sme si teda na narodeniny dali s priatelom to najcennejsie. Dali sme si cas. Cas, ktory sme stravili utekom do Cornwallu a tym, ze sme si hladeli do oci s laskou, stastim a vdacnostou za vsetko, co mame. A potom som prisla so sialenym napadom upiect nam nejaku uzasnu, 4 poschodovu tortu, ktora by to vsetko zaklincovala. A tak aj bolo. Nevadi, ze sme mali tuto tortisko az 5 dni po narodeninach, hlavne ze bola. A hlavne, ze bola uazsna. Spolocne sme si na nej zapalili sviecky, sfukli ich a priali si, aby sa tie nase najtajnejsie sny stali skutocnostou.. Sfukli sme sviecky na torte, ktore sme si skutocne zasluzili. Zasluzili sme si zaborit vidlicku do uzasnych vrstiev jemneho kolaca, ktory hovori zjedz ma, vychutnaj si ma, miluj ma. A veru sme ten kolac aj zjedli a zboznovali, taka to bola paradna tortisko! S tym jemnym a elegantnym vyzorom a s dobrodruznymi chutami vo vnutri to bol vysnivany kus torty na tanieri.

Je to kolac, ktory je uplne vegansky, no nikto by ani nepovedal. Takze ak ho upeciete, toto tajomstvo nemusi nikto vediet, hlavne ak je ten niekto proti vsetkym ´znackovavanim jedal´ typu veganske(co pre niektorych znamena maximalne nudne). Taktiez to nejako nemusim, tak si len povedzme, ze tento kolac je pre vsetkych. A vsetci ho miluju.

Kolacik je upeceny zo spaldovej muky, vonia krasne po javorovom sirupe a vanilke. Medzi vrstvami je uzasny kokosovy krem, ten najjemnejsi aky si len dokazete predstavit, ochuteny lokalnym medikom a troskou vanilky. Tento kolac presvedci aj toho najvacsieho neveriaceho Tomasa, ze zdrave neznamena nudne ale fantasticke. Torta je bez akejkolvek rafinovanej muky alebo rafinovaneho cukru, takze je naozaj velmi nezny na nasu traviacu sustavu. Je vyzivny (ano, citate spravne -kolac moze byt vyzivny:) a velmi chutny.

Narodeninová torta s javorovým sirupom a s jemnučkým kokosovým krémom

(z tohto receptu vam vznikne 1 korpus, no ak chete upiect tortu ako na obrazku, jednoducho len zdvojnasobte davku)

2 salky celozrnnej spaldovej muky
2 lyzicky kypriace prasku do peciva (pouzivam organicky bez fosfatov)
1/2 lyzicky sody bikarbony
stipka morskej soli
4 lyzice kokosoveho oleja, roztopeneho a vychladnuteho
1/2 salky javoroveho sirupu
1 salka rastlinneho mlieka
1/2 vanilkoveho struku, vyskrabkane semiacka
1 lyzicka jablcneho octu

Predhrejte si ruru na 180°C. Vymazte si mensiu okruhlu formu na pecenie kokosovym olejom a spodok si vylozte papierom na pecenie.
V jednej miske si spolu zmiesajte muku, prasok do peciva, sodubikarbonu a sol.
V druhej miske zmiesajte kokosovy olej, javorovy sirup, mlieko, vanikove semiacka. Dajte si pozor aby mlieko nebolo chladne, vas kokosovy olej v momente ztuhne. Ak sa tak stane, jendoducho len jemne zohrejte vsetky ´mokre´suroviny.
Do misky, v ktorej mate muku jemne vmiesajte mokre ingrediencie, dokym cesto nie je jemne. Rychlo do cesta vmiesajte jablcny ocot a cesto vylejte do pripravenej tortovej formy.
Ak na povrchu cesta vznikli bublinky, vezmite si formu do ruk a pustite ju z malej vysky na kuchynsku dosku. Bublinky by mali zmiznut.
Pecte vo vyhriatej rure asi 30 minut, dokym sparatko, ktore do ceste vopchate, vytiahnete suche.
Nechajte korpus vychladnut vo forme asi 10 minut, potom cesto prelozte na mriezku a nechajte vychladnut. Cesto mozete upiect aj den vopred a skladovat v chladnicke, dokym ho nebudete potrebovat.

Kokosový krém
2 konzervy organickeho, plnotucneho kokosoveho mlieka, vychladnute v chladnicke najmenej 4-6 hodin
1-2 lyzicky tuheho mediku
vanilkove semiacka, vyskrabkane z 1/2 vanilkoveho struku
Otvorte konzervy kokosoveho mlieka. Lyzicou vyberte bielu vrstvu tuku, ktora sa zhromazdila navrchu konzervy. Vidlickou tuk popucte na mensie casti a nasledne ho vyslahajte na penu. Postupujte ako keby ste slahali slahacku. :) Vmiesajte do kremu medik a vanilkove semiacka. Skladujte v chladnicke dokym nebudete krem potrebovat.

Ked ste pripraveni na zdobenie torty, vezmite si korpus. Rozkrojte ho opatrne na 2 casti. Jednotlive korpusy mozete poliat rumom alebo oblubenym likerom, doda to kolacu uzasnu chut a aromu. Na korpus rozotrite asi 3 lyzice kokosoveho kremu, prikryte korpusom a opakujte dokym vam nevznikne krasna torta podla vasich predstav.
Tortu ozdobte. Podavajte s velikanskym usmevom na vasej tvari a s pocitom hrdosti, co za krasu ste to upiekli. :)
