Oh man was he right!

I wish we all could gather around one table and have breakfast together. Share our stories, share the happiness and love, share beautiful and nourishing breakfast at some place, totally unknown. That´s the dream.

And because I can´t have breakfast with everyone I love at the same time, I leave you with a gorgeous recipe for morning quinoa granola that you can make. And we can be connected by our morning bowls. At least.

This recipe is inspired by a wonderful girl who stands behind a delicious foodblog The Hortus Cuisine, where she shares her healthy twist on Italian classics without taking anything from them, leaving them filled with gorgeous flavours. I am excited to announce that I will be helping her out with an exciting project of hers, so stay tuned. :)

Super Nutty Quinoa Granola is gluten free, so it is suitale for everyone who is sensitive to gluten. It easier on our digestive system. It is a complete protein which means it contains all essential amino acids that our bodies need for repair. Great for vegetarians and vegans! :) I love its poppy seed like smell, its funky texture once cooked (little tail appears when quinoa is cooked retaining a bit of bite) and its crunchiness once baked.

This wholesome granola is full of nuts, seeds and flavours, oh it is so good! If you go nuts over nuts, this is the granola for you. Just promise me you won´t end up eating the whole batch as I did and then you will have nothing to eat in the morning.

Super nutty Quinoa Granola

1/2 cup almonds
1/2 cup walnuts
1/2 cup hazelnuts
1/4 cup mix of chia seeds and linseeds
1/4 sunflower seeds
1/2 cup quinoa, rinsed 2-3 times
2 heaping tbls coconut oil
1 tbs maple syrup or rice syrup
pinch of salt
1 tsp vanilla extract or seeds from 1/2 vanilla bean

Preheat your oven to 160°C. Line a baking tray with baking paper.
In a mixer, chop together almonds, walnuts and hazelnuts, leaving some pieces bigger. You want the crunch, so don´t over mix or you will end up with a nut butter! :)
Tip the chopped nuts into a bowl and mix together with all of your seeds, quinoa, salt and cinnamon.
In a bowl, melt coconut oil, sirup and vanilla extract. Mix it into your nut, seed and quinoa mixture. Spread it evenly onto your prepared baking tray. Bake for about 30-40 minutes until beautifully fragrant and golden brown. Stir the mixture a couple of times when baking so the granola can bake evenly.
When baked, let cool and store in an air-tight container/jar for about 4-6 weeks. Mnom.

To je moj sen. Aby sme si vsetci mohli sadnut za jeden obrovsky stol na neznamom mieste, spolocne zdielat svoje pribehy, stastie, lasku a uzasne chutne ranajky.To je sen.
Ale preto, ze nemozem mt tketo ranajky so vsetkymi, ktorymi by som chcela, doprajem vam prave tento recept, ktory si mozete pripravit sami doma a koniec koncov mozem byt spolu aspon myslienkami spolu s ranajkovou miskou plnou tejto ohromnej granoly. Aspon nieco. :)
Pri tomto recepte som sa inspirovala jednou skvelou foodblogerkou, s ktorou budem onedlho spolupracovat na zaujimavom projekte. Toto nadane dievca stoji za blogom menom The Hortus Cusine, kde sa s citatelmi deli o fantasticke talianske recepty, ktore obohatila o zdrave suroviny bez toho aby jedlu odobrala co i len trosku tej klaickej famoznej chuti.
Tato Quinoa granola je uplne bez lepku, takze si ju mozu s radostou dopriat aj celiatici. Je omnoho lahsie stravitelna pre nase telo ako klasicke kupovane cerealie a granoly. Quinoa je perfektnou nahradou proteinu pre vegetarianov a veganov, pretoze obsahuje vsetky esencialne mastne kyseliny, ktore nase telo tak velmi potrebuje na obnovu a revitalizaciu. Mam rada tu zvlastnu, skoro az makovu chut quinoi, tu texturu, ked sa uvari a zo zrniecok vykuka malicky chvostik alebo ked je quinoa upecena a krasne chrumkava.
Granola je plna uzasnych chuti z mnozstva pouzitych orieskov a semiacok. Takze ak srsite neobmedzenou laskou ku orechom, verim ze si s touto granolou pridete na svoje. Len mi slubte, ze po jej upeceni ju nezjete celu len tak na posedenie ako som to spravila ja a na ranajky vam nic nezostane. :)
Dobru chut prajem a pamatajte, ze kazde rano moze byt uzasne a neuveritelne chutne! :)
Super oriešková granola s quinoou
1/2 salky mandli
1/2 salky vlasskych orechov
1/2 salky lieskovcov
1/4 salky mix lanovych semiacok a chia semiacok
1/4 salky slnecnicovych semiacok
1/2 salky quinoa, premytej 2-3 krat
2 poriadne lyzice kokosoveho oleja
1 lyzica javoroveho sirupu alebo ryzoveho sladu
1 lyzicka vanilkoveho extraktu alebo semiacka z 1/2 vanilkoveho struku
stipka morskej soli
1 vrchovata lyzicka mletej skorice
Ruru si predhrejte na 180°C. Papierom na pecenie si vylozte velky pekac.
V mixeri posekajte spolu mandle, vlasaky a lieskovce tak, aby vam zostali aj nejake velke kusky orechov. Chcete predsa chrumkat! :)
Posekane orechy si dajte do misy a zmiesajte ich spolu s quinoou a vsetkymi semiackami. Primiesajte aj stipku soli a mletu skoricu.
Roztopte si kokosovy olej, sirup a vanilku. Primiesajte to ku vasej orieskovej zmesi a vsetko rovnomerne rozprestrite na pripraveny pekac.
Pecte do chrumkava asi 30-40 minut a par krat granolu pocas pecenia pootacajte.
Po upeceni nechajte vychladnut a skladujte v uzavretej nadobe po dobu 4-6 tyzdnov. Mnam.
