Summer Raspberry Cake. Letná malinová bublanina.

 

This is such a simple and purely delicious summer cake. It takes only a little time to prepare and within 30 minutes from start to finish, you have yourself a beautiful, refreshing, light and delicious summer cake.

We bake this cake when there is a lot fresh seasonal fruit laying around. Without a doubt, this cake must be one of the most baked cakes in Slovakia. When you´ll bake it, you will understand why.

If there is no fresh fruit, you can easily throw in some homemade candied/bottled fruit that your grandma bottled with love and put on the crowded shelves in the cupboard. This is that kind of cake that everyone loves. No fuss, no mess, just whole and pure ingredients mixed together with love into a cake – that´s the recipe for unbeatable summer cake.

This cake is refreshing, light and every bite melts in your mouth. There is almost no need to chew! As I´ve mentioned earlier, any fresh seasonal fruit suits this cake, especially if there are raspberries, strawberries, redcurrants or blueberries in season – mix them in and let them shine! :)

Traditionally, this cake is bake as a traybake cake that´s filled with refined flour and sugar. My recipe reaches for ground almonds and only 2 tablespoons of sweetener, so it is really gentle on your digestive system and the whole body. Ground almonds make this cake deliciously moist and are packed with protein, vitamin E, heart healthy fats that can help lower cholesterol. Add the benefits of olive oil and pistachios to it and you have yourself a total goodness in every slice of cake! :)

Summer Raspberry Cake

1 1/2 cup ground almonds
2 happy eggs (room temperature)
2 tbls honey or maple syrup
2 tbs olive oil
zest from 1 unwaxed lemon
pinch of soda bicarbonate
1 tsp vanilla extract or scraped seeds from 1/2 vanilla been
handful of raspberries (or other fresh seasonal fruit)
1/3 cup pistachios, roughly chopped

Preheat your oven to 180°C.
Divied your eggs into egg whites and egg yolks. Whisk egg whites in a super clean bowl with a pinch of salt until fluffy and snowy.
Beat the egg yolks with honey or maple syrup until light and fluffy. Add in olive oil, lemon zest and vanilla extract or vanilla seeds. Fold in your ground almonds mixed with soda bicarbonate- the mixture will be dry, but no worry. Gently fold your whisked egg whites into the almond mixture and mix until smooth batter forms but don´t over mix.
Grease a small round baking tin or ceramic baking dish with olive oil, butter or coconut oil. Sprinkle ground almonds all over and pour your batter in. Sprinkle raspberries on top, followed by chopped pistachios.
Bake for about 20-30 minutes until golden brown and looking beautiful.
Let cool and serve with some fresh raspberries or thick natural yoghurt. Enjoy.

Toto je jednoduchy, chutny a cisto uzasny letny kolacik. Jeho priprava zaberie naozaj len trosku casu a po iba 30 minutach si mozete vychutnat tento krasny, osviezujuci, lahucky a vyborny letny kolac plny ovocia.

Som si ista, ze bublanina je kolac, ktory sa pecie na Slovensku jednoznacne najcastejsie do roka, pretoze sa v nom da zuzitkovat hocijake sezonne ovocie, ba dokonca aj zavarane ovocie od starych mam, ktore boli s laskou zavarene do flasticiek a ulozene na preplnene police v spajzi. Tento kolac maju radi naozaj vsetci, je to taky vdacny kolacik :) Ziadny neporiadok v kuchyni so zbytocne vela varechami a milion ingredienciami, len par skvelch surovin a trocha lasky, to je recept na uzasnu bublaninu.

Tato moja bublanina je osviezujuca, lahucka ako oblacik a kazdy kusocek sa vam rozpusta na jazyku. Skoro tu nie je potreba zapojit zuvacie svaly! (ste si vydychli, ze nemusite kazde susto prezuvat aspon 25krat ako to pisu na kazdom kroku, vsak?! :) Ako som spominala, kazde ovocie sa tu naramne hodi, hlavne ak su v sezone malinky, jahody, cernice, ribezle, ci cucoriedky – nevahajte a sup tam s nimi do cesta! :)

Tradicne sa bublanina na Slovensku pecie s rafinovanymi mukami a cukrom, no v mojom recepte som pouzila mlete mandle a len 2 lyzice sladidla, takze kolacik je lahsie stravitelny, vyzivnejsi a benefituje z neho cele telo. Mlete mandle robia tento kolacik stavnatym, plnym proteinu, vitaminu E a srdcu prospesnych tukov, ktore napomahaju v znizovani cholesterolu. Ku tomuto pripocitajte skvele vlastnosti olivoveho oleja a pistacii a mozte si servirovat zdravie na tanieri! :)

Letná malinová bublanina 

1 1/2 salky mletych mandli
2 stastne vajicka, izbovej teploty
2 lyzice mediku alebo javoroveho sirupu
2 lyzice olivoveho oleja
postruhana kora z 1 chemicky neosetreneho citronu
stipka sody bikarbony
1 lyzicka vanilkoveho extractu alebo vyskrabkane semiacka z 1/2 vanilkoveho struku
hrst cerstvych malin (alebo ineho cerstveho sezonneho ovocia)
1/3 salky pistacii, pokrajanych na mensie kusky

Predhrejte si ruru na 180°C.
Oddelte si vajicka do dvoch misiek na zltka a bielka. Bielka vyslahajte so stipkou soli v super cistej miske az dokym vam nevznikne krasne vyslahana snehova pena.
V miske ku zltkam pridajte medik a slahajte do jemna a penista. Pridajte olej, citronovu koru, vanilkovy extrakt alebo semiacka z vanilkoveho lusku a premiesajte. Pridajte mlete mandle zmiesane so sodou bikarbonou. Vznikne vam trosku suchsia zmes, no to nevadi.
Pomaly ku mandlovej zmesi pridajte vyslahane bielka a premiesajte dokym vam nevznikne jemne cesto. Snazte sa vase cesto zbytocne nepreslahat, chcete aby bolo po upeceni stale nadychane a krasne.
Vylejte cesto do mensej zapekacej okruhlej formy, ktoru ste si vymastili tukom (olivovy olej, maslo alebo kokosovy olej) a vysypali troskou pomletych mandli. Navrch poukladajte maliny alebo ovocie podla vasho vyberu, posypte posekanymi pistaciami a dajte piect.
Pecte asi tak 20-30 minut do vonava a zlatava.
Podavajte vychladnute s cerstvymi malinami alebo troskou naturalneho jogurtu. Nech vam chuti!
