Strawberry Salad with Rye Granola and Hazelnuts. Jahôdkový šalát s granolou a lieskovcami.

When the life gives you strawberries, eat them. Eat them all day long. Have them for breakfast, have them for lunch, eat them as a snack and even finish your day with them! I can never get enough of strawberries at this time of a year so I always end up buying waaay more than me and my boy can possibly eat. My fridge is full of them, my freezer can´t be closed properly without kicking my door with my foot because even the freezer is falling in love with these sweet beauties.

I make PB and Strawberry Jelly milkshakes, I bake tarts and gallettes, I eat them as they are and my latest thing has been putting them into a salad with crunchy rye granola. Then I drizzle it beautifully with honey and lemon dressing and eat it like nobody´s bussiness.
I serve this salad with a rye granola because I just love the combination of light and refreshing strawberries with the earthy and nutty flavour of rye flakes. But, of course, this is optional, you can use any kind of granola that you´ve got on hand.

Say goodbye to boring salads (although I am a firm believer that salads simply can not be boring) and endeavor this light and satisfying strawberry yummy salad.

Strawberry Salad with Rye Granola and Hazelnuts
(serves 2)

For the salad

1 big handful of strawberries, hulled and cut into halves
1 avocado, beautifully ripe
2 handfuls young spinach leaves
bunch of fresh mint, leaves only

For the honey and lemon dressing

4 tbs extra virgin olive oil
1-2 tbs lemon juice
1 tbs good quality honey
tiny pinch of sea salt

For the Rye Granola

1 cup rye flakes
1/2 cups hazelnuts
1/4 cup pumpkin seeds
1/4 cups linseeds
juice and zest of 1/2 orange
1/2 tsp ground cinnamon
pinch of ground ginger
2 tbs olive oil
2 tbs maple or date syrup
pinch of sea salt
1 egg white, whisked (if you want your granola to be chunky; optional)

Make your granola. Preheat the oven to 150°C. Mix together rye flakes, seeds, cinnamon, ginger and salt. In a small bowl, combine orange zest and juice, olive oil and sweetener of your choice. Combine it all together, fold in a whisked egg white if you want your granola to end up chunky. Spread your mixture on a baking sheet lined with baking paper.
Put your hazelnuts in a small tray or a small baking dish. Put both trays into the preheated oven and bake. Bake the hazelnuts until fragrant and until the skin begins to crack (15 minutes) and bake the granola until crisp and fragrant, about 20-25 minutes. Chheck the granola when you will be taking out the hazelnuts from the oven and mix it through gently if you don´t want to destroy your chunks of granola.
Rub the hazelnuts between the palms of your hands to remove some of their bitter tasting skin off. Chop them roughly.
Take the granola out of the oven, let cool. Transfer to a clean jar and store for up to a month or so.

For the dressing, mix everything together in a small jar. Taste and adjust to your liking.

For the salad, wash all your veggies and fruit. Put spinach leaves on two plates (or into a bigger bowl), Halve and cut your avocado flesh into cubes. Put on top the spinach leaves together with strawberries. Sprinkle with mint leaves, chunks of granola, toasted and chopped hazelnuts. Drizzle the salad with your honey and lemon dressing and enjoy this salad with its refreshing taste and crunchiness! :)

Ked vam zivot ponukne jahody, len ich pekne jedzte. Dajte si ich na ranajky, na obed, pochutnavajte si na nich v case olovrantu a tiez s nimi svoj den aj zakoncite! V tomto rocnom obdobi sa jahod nemozem dojest a tak vzdy skoncim s kupou takeho mnozstva jahod, ktore doma nie sme schopni zjest. A ked je ich plno v chladnicke, nezostava nic ine, len aby sa do jahod zalubil aj mraziak. Ten nas mraziak je teraz taky plny tychto cervenych krasiek, ze ho musime zatvarat poriadnym kopnutim nohou.

Robim si doma mliecne koktejly s jahodami a arasidovym (alebo inym orieskovym) maslom, peciem rozne jahodove kolaciky, gallettes a torticky, davam si ich na ranajky a tieto posledny dni si jahody nasli cestu aj do tohoto uzasneho salatu s granolou. Pred podavanim tento salatik krasne polejem s medovo-citronovym dresingom a uz nepocut nic ine, iba strkot vidlicky o tanier. Mnam.

Ja tento salatik podavam s granolou, kde pouzivam zitne vlocky, lebo ta chut sladuckych a osviezujucich jahod s charaskteristickou chutou zita je pre mna naozaj nieco skvele. Ale, samozrejme, toto je individualne, mozte pomozit hocijaku granolu aku doma najdete.

Takze povedzte zbohom nudnym salatom (aj ked ja soobne verim, ze salat nedokaze byt nudny) a pustite sa s chutou do tohto lahkeho, osviezujuceho a chutneho salatu.

Jahodový šalát s granolou a lieskovcami 
(porcia pre 2)

Na salat

1 poriadna hrst jahod, odstopkovanych a pokrajanych na polovicky
1 zrele avokado
2 hrste mladych spenatovych listov
mensi zvazok matovych listkov

Na medovo-citronovy dresing

4 lyzice extra panenskeho olivoveho oleja
1/2 lyzice citronovej stavy
1 lyzica kvalitneho mediku
stipka morskej soli

Na zitnu granolu

1 salka zitnych vlociek
1/2 salky lieskovcov
1/4 salky tekvicovych semiacok
1/4 salky lanovych semiacok
stava a postruhana kora z 1/2 pomaranca
1/2 lyzicky mletej skorice
stipka mleteho zazvoru
2 lyzice olivoveho oleja
2 lyzice javoroveho alebo datloveho sirupu
stipka morskej soli
1 bielko, vyslahane (pouzite len vtedy, ak chcete aby vasa granola bola ´chunky´-aby v nej boli poriadne kusy ´zlepenej´ granoly)

Najprv si pripravte granolu. Predhrejte si ruru na 150°C. Zmiesajte spolu vlocky, semiacka, skoricu, zazvor a sol. V druhej miske si spolu zmiesajte olivovy olej, sirup, pomarancovu stavu a koru. Vsetko spolu premiesajte a ak pouzivate bielko, jemne ho do granola vmiesajte. Vysypte granolu na pekac, vystlany papierom na pecenie. Do mensej zapekacej misky vysypte lieskovce. Obidva pekace vlozte do rury. Lieskovce pecte asi tak 15 minut, dokym nezacne krasne vonat a dokym sa nezacnu ´vyzliekat´ zo supky. Granolu pecte nieco okolo 20 minut, dokym nie je krasne opecena, chrumkava a vonava. Niekedy v polovici pecenia ju jemne pootacajte.
Po upeceni granolu nechajte vychladit, prelozte do flasky a skladujte po dobu nieco okolo mesiaca.
Lieskovce o seba poobtierajte medzi dlanami ruk aby ste z nich dostali ich supku, ktora moze chutit horko. Potom lieskovce posekajte na vacsie kusky.

Na dresing si vymiesajte vsetko v malickej flaske. Ochutte a prisposobte vasim chutovym poharikom.

Na salat si umyte vsetku vasu zeleninu a ovocie. Poukladajte spenatove listy na 2 taniere (alebo do velkej misy). Odkostkujte si avokado a nakrajajte ho na mensie kusky, ktore poukladate na spenatove listy a pridajte jahodky. Posypte matovymi listkami, granolou a nakoniec dozdobte oprazenymi lieskovymi orieskami. Prelejte dresingom a uz si len vychutnajte krasne osviezujuci, lahky a stavnaty salat. :)
