Maple and Olive Oil Granola. Granola s olivovým olejom a javorovým sirupom.

I know what you´re thinking. Olive oil for breakfast? Am I joking? Actually, no I am not joking and yes, olive oil for breakfast.

I don´t advice you to drink olive oil for breakfast with your cup of tea (like I do), but I advice you to have it as a flavoursome sensation that marries beautifuly with lovely, caramely aroma from maple syrup. And when you add toasted nuts, seeds and oats to it, you are in for a treat. Plus, when baking this granola, the whole kitchen smells so delicious that you find a huge smile all across your face. And you will try to get your nose as close to your oven door as possible so you could inhale as much of the heavenly smell as possible.

The idea of adding olive oil into a granola occured to me, when I was putting some nuts and seeds into a oven, so I could enjoy some toasted goodness later on that day. I looked at a bottle of a beautiful homemade olive oil and that´s when I´ve started experimenting with this delicious granola, that you´ll get addicted to.

Nothing else is needed, just a spoon, some coconut milk, ´live´ yoghurt and maybe a sprinkling of cinnamon if you are feeling adventurous.

This granola is so crazy delicious, that you could have it for your Sunday desert as well. Serve it with whipped up mascarpone, fruit compote and you have yourself a lovely (and crunchy!) dessert, ready to be eaten within seconds, which will make happy every soul looking for a dessert after Sunday lunch (or any lunch).

Oats are an excellent source of fibre, which makes us feel full for longer. They soothe the nervous system, are easy to digest, they reduce cholesterol. And once baked, they become beutifully crunchy and yummy.

Maple syrup is like a gift from Mother nature. It contains manganese, zinc, and natural antioxidants which are great for the immune system. Did you know that maple syrup contains 15 times more calcium than honey? :)

Olive oil is the third musketeer in this recipe, providing the luscious flavour. High-quality, cold-pressed olive oil has been eaten for centuries. It is the centre of a mediterenian diet-no wonder that the guys from over there live up until 100, easily. Cold-pressed olive oil is a monosaturated fat that is considered to be a great source of essential fatty acids. It contains vitamins that protect against heart disease, it promotes digestion and helps lower down cholesterol. It tastes incredible if you have got the proper stuff, so try to invest in an organic olive oil-you won´t look back.

Maple and Olive Oil Granola

2 cups rolled oats (certified gluten free if intolerant)
1 cups almonds, roughly chopped
1/2 cup mixture of pumpkin and sunflower seeds
1/3 cup good quality olive oil
1/4 cup maple syrup (use 100% maple syrup; sometime producers use a blend of syrup and water) also, you don´t want to use a lot of syrup-you don´t want the sweetness, just the beautiful flavour)
1 tsp vanilla extract
2 tsp ground cinnamon
big pinch of sea salt

Preheat your oven to 150°C. Mix together oats, nuts, seeds, salt and cinnamon in a large bowl. In a small mug, whisk together olive oil, maple syrup and vanilla extract. Pour it over your oat base and mix it all up. Spread it on a baking sheet lined with baking paper and bake for about 20-30 minutes until golden and fragrant. You could also mix your granola a few times while cooking. When baked, allow to cool, transfer to a pretty jar and store at room temperature. Yum.

Ale nebojte sa, neradim vam aby ste zapijali vasu salku rannej kavy alebo caju olivovym olejom (ako to robim ja), no namiesto toho si vychutnajte olivovy olej ako uzasnu senzaciu chuti, ktora si skvelo rozumie s jemne sladkou a karamelovou chutou javoroveho sirupu.

Ked si zvladnete upiect tuto granolu, potom vam uz k stastiu naozaj nic netreba.

A ked si ich do chrumkava opeciete, chutia uzasne!

Granola s jovorovým sirupom a olivovým olejom

2 salky ovsenych vlociek
1 salka mandli, pokrajanych na mensie kusky
1 salka mix slnecnicovych a tekvicovych semiacok
1/3 salky kvalitneho olivoveho oleja
1/4 salky javoroveho sirupu (pouzivajte iba 100%, niekedy totiz vyrobcovia miesaju javorovy sirup s vodou), nepouzivajte viac ako je treba, nechcete mat granolu presladenu-nam tu teraz ide len o tu uzasnu chut a vonu javoroveho sirupu :)
1 lyzicka vanilkoveho extraktu
2 lyzicky mletej skorice
velka stipka morskej soli

Ruru si predhrejeme na 150°C. Vo velke mise si spolu zmiesame vlocky, mandle, semiacka, skoricu a sol. V salke si spolu rozmiesame olivovy olej, javorovy sirup a vanilkovy extrakt. Vsetko spolu riadne premiesajte. Pecte 20-30 minut, dokym nie je granola nazlatla a uzasne vonava. Pocas pecenia ju mozete par krat premiesat. Po upeceni ju nechajte vychladnut a prelozte do nejakej nadhernej flasky. mnam.
