Magic Tart

The feeling of being home is like no other feeling on Earth. It seems like nothing changes everytime you get back to your roots.

Everything smells like childhood. Your grandma´s kitchen smells exactly like when you used to help her bake the same cookies. The nature around you gives you a chance to be able to breath in the freshest air. Not like the one you breath in in noisy cities crowded with people, but the fresh, moist and wonderfully smelling mountain air which you can´t get enough of.

Being home gives you an unlimited freedom. Being home is like travelling on a magic carpet throughout all the places you loved running around when growing up and throughout memories no one will ever take away from you.

We were home. After almost 8 months of not seeing our families and friends; after  almost 8 months of not being able to breath the amazing mountain air – we arrived home to Slovakia. And it was magical. We felt amazing as soon as we opened the doors on our houses – we felt safe. We felt like nothing has changed and that we could forget everything happening around us and just be in the moment.

We felt alive because we were surrounded by ´our´ people who love us with all our mistake with their whole hearts. And they also say they love us because my boy prepares fancy cocktails for them and because I cook and bake. And we love it. We love to make them happy with great food and great drinks. And the best thing is to enjoy all of this while sitting together at one table and trying to catch up on things that happen in our busy lives.

This is something I´ve created when we were home. Magic Tart Crust which holds any filling you put on it and which always dissapears when you put in the middle of a table. It is crunchy, it has got a wonderful aroma of toasted seeds, it holds its shape perfectly when you take it out of the form, it is not laden with sugar and gluten and it can made into a dairy free version as well.

The tart crust is made with seeds and oats.
I´ve used sunflower seeds here, because I just love their nuttiness once they are toasted. They are super high in vitamin E which helps maintain helathy skin and hair, it protects cells from damage and has got anti-cancer properties. They are also rich in B vitamins, protein and they aid the immune system. They replace the taste of nuts to all of those out there who suffer from nut allergies. You could also sprout them by putting them in a filtered water overnight and then rinsing them at least twice a day until a visible tail starts to appear and they open up as if they are yawning. It looks quite funny when they sprout.

Oats are healthy, wholegrain ingredient. They provide carbohydrate, protein, fibre, vitamins, minerals and antioxidants for the body. Oats contain more soluble fibre than any other grain which means they make you feel amazingly full for longer. They are easy to digest (especially when fermented overnight and cooked). They soothe nerves, help reduce cholesterol and taste naturally sweet which is a perfect addition into your smoothies and baked goods.

Magic Tart

1/2 cup sunflower seeds (or almonds, walnuts, pecan nuts..)
2 cups rolled oats (if intolerant to gluten use certified gluten-free)
60 ml coconut oil or proper good-quality butter, melted
2 tbls maple syrup
2-3 tbls cold water
pinch of sea salt

Preheat your oven to 180°C. Grease a round cake tin with butter or coconut oil.
Put a pan over medium heat and toast your seeds (or nuts of your choice) until golden brown and fragrant and until they smell that delicious, that you just want to eat them all (as I do, everytime I toast my seeds and nuts).

Put your toasted seeds together with oats and salt into a food processor and pulse until you have a rough flour. Add in coconut oil/butter, maple syrup, cold water and mix until the mixture resembles wet sand. Take a bit of the mixture and press it between your fingers – if it holds together, you are done. If not, put  a bit more water into the mixture and pulse once more. Sweeten a bit more if desired.

Press the mixture into your prepared tin and press firmly on the bottom and up the sides. Make sure that the dough is the same thickness all over the pan. Prick the dough with fork and bake in the preheated oven until golden brown and beautiful. It should take around 20 minutes.

Let cool in the tin completely. Fill with your favourite filling and watch the cake as it dissapears really quickly from the serving plate. This cake is made effortlessly with simply ingredients, is impressive and full of delicious flavours. :)

Here are some ideas for the filling:
– mascarpone, quark or thick greek yoghurt sweetened with maple syrup and vanilla, sprinkled with fresh or frozen berries nd decorated with fresh mint leaves or edible flowers
– tart can be filled with fruit and then baked together with some nice and delicate crumble; serve it with a good quality vanilla ice-cream or vanilla sauce
– you could fill this tart with a good amount of seasonal fruit and serve it as a light dessert after a big lunch or dinner
-or fill it up with chocolate mousse that´s made out of avocados, bananas and cacao and then sprinkle some toasted nuts, seeds or coconut on top

Magický Tart

Ten pocit, ked sa opat vratite domov, do rodnej zeme, neprekona ziaden iny pocit na svete. Vzdy, ked sa vratite ku svojim korenom citite, akoby sa nic nezmenilo.

Vsetko vonia po detstve. Kuchyna vasej starej mamy vonia presne tak isto ako ked ste jej pomahali piect buchty, ked ste boli mali. Priroda okolo vas vam dava moznost dychat ten najsviezejsi vzduch. Nie taky, ktory mate do seba moznost vdychovat v hlucnych a preplnenych mestach; ale taky ten sviezi, vlhky, skoro az podhorsky vzduch, ktory vonia vsetkymi tymi krasne zelenymi horami okolo vas. Taky vzduch, ktoreho sa neviete nabazit.

Byt doma vam dava pocit tej najvacsej slobody bez hranic. Byt doma je ako cestovanie na carovnom lietajucom koberci po miestach, kde ste vyrastali a cez spomienky, ktore vam nikto nikdy nevezme.

Boli sme doma. Po skoro 8 mesiacoch bez toho, aby sme sa stretli s rodinami, blizkymi a priatelmi a bez toho aby sme mali moznost dychat – dychat ten uzasny vzduch – sme prisli domov na Slovensko.

A bolo to magicke. Citili sme sa uzasne co len sme otvorili dvere na nasich domovoch – citili sme sa v bezpeci. Citili sme sa ako keby sa nic okolo nas nezmenilo a my sme mohli zabudnut na vsetko okolo nas a uzivat si tu moznost bytia v danom momente.

Citili sme sa ako znovuzrodeni, lebo sme mali okolo seba ´svojich´ ludi, ktori nas zboznuju ich celym srdcom a so vsetkymi nasimi chybami. A myslim, ze aj preto, pretoze moj chlapec im vzdy namiesa nejake skvele cocktaily a ja vzdy nieco varim a peciem. A my to zboznujeme tak isto. Sme nesmierne stastni, ked ich mozeme potesit skvelymi drinkami a este lepsim jedlo. A ked spolu mozme soslavovat nase zivoty za jednym stolom, kde sa nam nikdy nezatvoria usta – vzdy sa spolu snazime dohnat vsetko stratene.

Tento tart je nieco, co som upiekla, ked sme boli doma. Je to magicky tart, ktory s potesenym ponesie hocijaku napln podla vasej chuti a ktory sa vynima v strede stola ako ten najuzasnejsi krasavec. Tart, ktory zmizne spred vasich tvari behom zmurknutia oka. Je tak vyborny. Je chrumkavy, vonia po opecenych semiackach, krasne drzi svoj tvar po vytiahnuti z formy, nie je napchaty cukrom a mnozstvom zbytocneho lepku a moze byt upraveny na verziu kolaca pre veganov.

Tart je upeceny hlavne zo semiacok a vlociek.
Pouzila som tu slnecnicove semiacka, pretoze zboznujem ich uzasnu orieskovu chut, ktoru je z nich citi na kilometre daleko po tom, ako sa opecu. Su bohate na vitamin E, vdaka ktore su nase vlasy a pokozka krasne a zdrave a vdaka ktoremu su bunky tela chranene pred poskodenim a volnymi radikalmi. Taktiez su snecnicove semiacka bohate na viatminy B, protein a napomahaju imutnemu aby za nas bojoval proti kazdemu virusu co sa na nas pozrie. Su skvelou nahradou orechov pre vsetkych, co na ne maju alergiu. Taktiez ich mozete naklicit jednoduchym sposobom, kedy ich namocitna celu noc do vody, rano preplachnete a 2-3 za den ich premyjete az dovtedy, dokym na semiackach nebude viditelny maly chvostik a semiaky nebudu rozdelen na polovicky – naklicene semiacka vyzeraju naozaj vtipne-ako keby zyvali!

Vlocky su zdrava obilnina, ktora by nemala chybat na jedalnom listku ziadnemu cloveku. Su to komplexne carbohydraty, ktore nase telo premiena na energiu; je to skvely zdroj proteinov, vlakniny, vitaminov, mineralov a antioxidantov. Vlocky obsahuju najviac lahko stravitelnej vlakniny zo vsetkych obilnin co znamena, ze vas zasytia na velmi dlhy cas. Su velmi lahko stravitelne (obzvlast ak su fermentovane alebo uvarene). Pomahaju ukludnovat nervovy system, znizuju cholesterol a su naturalne sladke, co je skvele ak ich chcete zahrnut do pecenia alebo roznych smoothies.

Magický Tart

1/2 salky slnecnicovych semiacok (alebo mandli, vlasakov, pekanovych orechov..)
2 salky ovsenych vlociek (ak treba, pouzite vyhradne bezlepkove)
60 ml rozpusteneho olivoveho oleja alebo roztopeneho kvalitneho a poctiveho masla
2 lyzice javoroveho sirupu
2-3 lyzice studenej vody
stipka morskej soli

Ruru si predhrejte na 180°C. Vymazte si okruhlu formu maslom alebo kokosovym olejom.
Na panvici si oprazte slnecnicove vlocky az dokym nemaju krasnu zlatavu farbu a dokym nevonaju tak, ze ich chcete vsetky okamzite zjest, ako to robim ja, zakazdym, ked semiacka opekam.

Opecene semiacka vlozte spolu s ovsenymi vlockami a stipkou soli do mixera a vymixujte dojemna. Pridajte kokosovy olej/roztopene maslo, studenu vodu, javorovy sirup a vymixujte dokym vam nevznikne hmota, ktora sa podoba na mokry piesok. Zoberte si male mnozstvo medzi prsty a ak sa po stlaceni prstami hmota na seba lepi, mate hotovo. Ak nie, pridajte este trosku studenej vody a popripade dosladte ak si prajete.

Celu zmes poriadne popritlacajte na spodok formy prstami. Pekne vsetko popritalcajte prstami po celom dne a stranach formy aby bolo cesto vsade rovnakej hrubky. Vsade cesto poprepichujte vidlickou a pecte v rozohriatej rure asi 20 minut, dokym cesto nie je krasne zlate a vonave.
Upecene cesticko nechajte vo forme uplne vychladnut a nasledne plnte podla fantazie a potom uz len sledujte ako rychlo zmizne spred vasich oci – je to vyborny kolacik, nenarocny na cas, suroviny a pripravu s maximalnym efektom a uzasnou chutou. :)

Ponukam vam zopar inspiracie na plnku do kolacika:
-mascarpone, tvaroh alebo grecky jogurt ochuteny javorovym sirupom a vanilkou a posypane cerstvym alebo mrazenym bobulovitym ovocim; ozdobene cerstvou mätou alebo jedlymi kvietkami
-tart naplnte ovocim a dajte zapiect do rury spolu s jemnou posypkou; podavajte s kvalitnou zmrzlinou alebo vanilkovou omackou
-tart mozte taktiez naplnit kopou sezonneho ovocia a podavat ako lahky dezert po nedelnom obede
– alebo ho naplnte cokoladovym mousse pripraveny z avokada, bananu a kakaa a ozdobene oprazenymi semiackami/orechmi alebo opecenym kokosom
