Rhubarb and Apricot Muffins. Rebarborové muffinky s marhuľami.

 

 

The best things in life are for free. Like when a total strange smiles at you and your whole day brightens up. Or when your loved one kisses you and hugs you. Or, when you get a bunch of homegrown rhubarb.

There is something amazing about the ability of picking up an apple right from a tree or pulling rhubarb stalks right from the ground. You can then get home, wash your rhubarb and your hands which are still dirty from pulling out the rhubarb, cut it into chunks and cook lovely orange, vanilla and rhubarb compote..or you can put an apron on and bake these lovely pinky ladies. It can´t get fresher (and more amazing!) than this. Having rhubarb that´s still freshly pulled from the ground and turn it into something beautiful like this.

So make the most out of this year´s rhubarb season. Don´t just poach it-slice it, cook it, mash it, spice it, eat it. Go wild with it! :)

Recipe for this Rhubarb compote is a keeper, especially when you can use it as a sweet and tart companion to everything from pancakes to muffins; it can easily become your toast´s favourite friend and if you dollop it on yoghurt and sprinkle some homemade granola on top-you´ll be speechless.

And now a word about muffins. These are nothing like the ones which bakeries try to sell you on; these are not sugary laden muffins with unbelievably huge ´dome´ and zero taste. These are nourishing, super tasty, sweet just enough so you could have these for breakfast as well, pinky from the outside, moist from the inside and crunchy on top with the lovely smell of walnuts, dried apricots, vanilla and nuttiness from spelt flour. They are that good, that I baked them twice this week. And it´s Friday only. Enough said.

 


Rhubarb and Apricot Muffins

(makes 12 beautiful muffins)

1 1/2 cup finely chopped rhubarb
1/2 cup dried apricots (I soak mine overnight, but it is not necessary)
1 1/2 cup wholemeal spelt flour
1/2 cup oat flour (simply grind your own oats)
1/3 cup good quality olive oil, cold-pressed
1/4 cup maple syrup (look for the real stuff, they often add water to it)
2 large happy eggs (or 2 tbls chia seeds mixed with 1/2 cup water)
1/2 cup freshly squeezed orange juice (I use the flesh from the orange as well)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
tiny pinch of sea salt
nuts and seeds of your choice(for sprinkling the muffins)

Preheat the oven to 180°C. Line your muffin pan with muffins cases.
Mix together spelt flour, oat flour, baking powder, soda bicarbonate(baking soda) and salt.
In another bowl, mix together olive oil, maple syrup, eggs (or chia eggs), vanilla extract and orange juice. Mix well and add it to the flour mixture. Gently mix through-don´t be precise, you can still have some lumps of flour left.
Gently fold in your rhubarb and apricots. Don´t over mix. Fill each muffin case about 2/3 full. Bake for 20-30 minutes, until springy to the touch. Let cool in the tin for a while, then transfer to a wire rack to cool. Enjoy!

Tie najlepsie veci v zicote su zadarmo. Ako napriklad, ked sa na vas uplne neznamy clovek usmeje a vam to jednoducho spravi den. Alebo ked vas clovek vasmu srdcu najblizsi pobozka a objime. Alebo, ked dostanete domacu rebarboru. To je tiez jedna z tych najlepsich veci, ktore su zadarmo.
Je na tom naozaj nieco kuzelne, ked sa mozete postavit ku stromu a obrat si jablcko alebo ked sa postavite ku hromade rebarborovych lopuchov a vlastnymi rukami si mozete rebarboru vytrhnut zo zeme. A potom len jednoducho pridete domov, tu vasu barboru vyumyvate (A vase ruky tiez, tolko zeminy uz isto dlho nevideli!), nakrajate a spravite z nej uzasny rebarborovo-pomarancovy kompót, prevonany vanilkou. Alebo si okolo pasa uviazete zasteru a upeciete tieto ruzove krasavice.

Takze si riadne uzite rebarborovu sezonu. Nemusite ju len piect-narezte ju, uvarte, popucte, zaujimavo ochutte a rovno aj zjedzte. Mozte aj lyzicou priamo z hrnca ako sa to darilo mne, hned ako nahle sa rebarborovy kompot dovaril. Vyblaznite sa s rebarborou pri hrncoch! :)

Ponukam vam recept na kompot z rebarbory, ktory ked raz vyskusate, nebudete sa moct nasytit. Hlavne preto, lebo sluzi neskutocne dobre ako spolocnik ku vsetkemu od palaciniek az po muffinky; velmi jednoducho sa stane najlepsim priatelom opeceneho kusku chleba; a vas jogurt a domaca granola sa potesia, ked ich vykraslite touto ruzovkastou omackou-budete jednoducho bez slov, je to vyborne.

A teraz trosku slova o muffinkach. Toto nie su take tie obchodove, co pretekaju cez papierove kosicky, ked sa pecu a ani take, co chutia po cukre a nicom inom. Tieto su uzasne vlacne, nesmierne chutne, sladke tak akurat, aby ste si ich mohli dopriat aj na ranajky, su nadherne ruzovucke zvonku vdaka vykukajucej rebarbore, su velmi vlacne zvnutra, chrumkave na povrchu vdaka vlasakom a cele su prevonane susenymi marhulami, vanilkou a orieskovou chutou spaldovej muky. Su take vyborne, ze som ich piekla uz dva razy za tento tyzden. A to je len piatok. Myslim, ze uz nemusim nic viac hovorit.

Rebarborové muffinky s marhuľami

(recept na 12 krasnych muffiniek)

1 1/2 salky nadrobno nakrajanej rebarbory
1/2 salky susenych marhul, pokrajanych na male kusky (nekupujte tie krasne oranzove, su napustene chemikaliou); ja som moje namocila cez noc do vody, ale to nie je nevyhnutne
1 1/2 salky celozrnnej spaldovej muky
1/2 salky ovsenej muky (jednoducho si pomelte vlastnu pouzitim ovsenych vlociek)
1/2 salky cerstvej pomarancovej stavy (pouzivam aj duzinu z pomaranca)
1/3 salky kvalitneho olivoveho oleja, za studena lisovaneho
1/4 salky javoroveho sirupu (davajte si pozor aky kupujete,pretoze do niektorych sirupov vyrobcovia pridavaju vodu)
2 velke vajicka od stastnych sliepok (alebo 2 lyzice chia semiacok pomiesane v 1/2 salke vody)
1 1/2 lyzicky prasku do peciva
1/2 lyzicky sody bikarbony
1 lyzicka vanilkoveho extraktu
malicka stipka morskej soli
semiacka a orechy podla vlastnej chuti (na posypanie muffiniek)

Predhrejte si ruru na 180°C. Muffinovu formu si vylozte papierovymi kosickami.
V mise spolu zmiesajte spaldovu a ovsenu muku, prasok do peciva, sodu bikarbonu a sol. V inej miske si zmiesajte vajicka (alebo chia vajicka-chia semiacka a vodou nechajte postat asi tak 15 minut, aby chia mohli vyprodukovat jemny gel a nasat do seba vodu:), olej, javorovy sirup, pomarancovy dzus, vanilkovy extrakt. Jemne obidve hmoty pomiesajte. Nemusite byt precizni, v pohode vam tam mozu zostat kusy nepomiesanej muky.
Jemne do cesta vmiesajte vasu krasnu rebarboru a najemno nakrajane marhule.
Naplnte muffinkove kosicky cestom do 2/3. Posypte muffinky orieskami, semiackami alebo vlockami. Pecte cca 20-30 minut, kym nie su pevne na dotyk a kym nevonaju uzasne.
Po upeceni ich nechajte vychladnut chvilku vo forme, potom ich celkopm nechajte vychladnut na mriezke (aj ked je tazke im odolat!). Podavajte s rebarborovym kompotom, ovcim alebo kozim jogurtom, alebo si ich jednoducho vychutnajte same. Su vyborne. Dobru chut!
