Homemade Spelt Tortillas. Domáce špaldové tortilly.

Oh, those smart Mexicans and their delicious tortilla wraps! Their well-known tortilla wraps are a cross between a crepe and a soft wheat-and-water based dough. Originally made with wheat or corn flour, these will hide in any filling of your choice. You name it and your tortilla will hide it. And then, when you bite into it, you will explore all those beautiful flavours and colours-just like a rainbow! Well, that´s exactly how I call my tortilla wraps – rainbows(arcoiris; to have a bit of a spanish influence here:). Sometimes,I can´t even believe myself, when I bite into my homemade tortilla, that´s how much different vegetables I can stuff in.
Simple, humble but amazing – tortilla wraps work as a vehicle for whatever you fancy. To be honest, we have tortilla nights in our house at least one a week, that´s how much we love these lovelies filled with whatever our fridge offers us that night. Right after I make tortillas, we just stuff them, roll them and all of a sudden, there is a silence in our house. Because we just can´t stop munching on them! :)
I´m giving you recipe for DELICIOUS and totally addicting peanut sauce that you can spred inside your tortillas-that´s my favourite way to eat these beauties. I am known to eat 3 of these, they are that good.
I have never bought a store bought version and I hope, that after trying out this recipe, you won´t buy the shop bought stuff either. They are simple to make and once you´ll make them, you´ll be asking yourself why you haven´t started making these years ago! So let´s go, let´s make some seriously good tortillas. Vamos!
Btw, these are made using spelt flour (both wholemeal and white spelt), because I just can´t stand the idea of using chemicaly processed and bleached white flour which has got no nutritions to offer, leaches minerals from our bodies and is simply tasteless. But using spelt flour on the other hand, gives you this  beautifully soft and nutty tasting tortilla, which is full of fibre, B vitamins and which improves your mood. See? I told you to be friend with spelt! :)
Homemade Spelt Tortillas
(makes about 5 tortillas, depending on the shapes and sizes)
1 cup spelt flour (I use mix of white spelt and wholemeal spelt)
big glug of olive oil (about 2-3 tbls)
great pinch of sea salt
1/3-1/2 cup water
extra flour for rolling
Put your flour and sea salt into a bowl. Mix. Pour in the olive oil and 1/3 cup of water. Using your hands, bring the dough together. If the dough is too crumble-like, add some more water, drop by drop. What you´re looking for is a soft dough that´s easy to play with.
Once the dough is beautiful, cut it into 5 equal pieces. Roll each piece into a bowl using the palms of your hands. Sprinkle a bit of flour onto your working surface and using a rolling pin (or a bottle/glass!), nicely roll your dough into a big circle-just like a pancake. Repeat with the remaining dough.
Heat up a non-stick pan over a medium-high heat. When the pan is hot, gently put one pancake on the pan. Cook for about a minute, flip over and cook a bit more (small bubbles should start appearing on the surface of your tortilla). When done, repeat with remaining balls. Don´t overcook it, otherwise you´ll end up with crunchy pancake that will be impossible to fold.
Wrap them into a linen tea towel and serve immediately with your favourite fillings.
If there will be any leftovers, let them dry out and then enjoy them as you would crackers with your favourite dip. :)
Seriously Good Peanut Sauce
2 heaping tbls of organic peanut butter (no salt, oil and sugar added)
splash of tamari sauce
squeeze of maple syrup or rice malt syrup
miso (optional but super yummy)
splash of olive oil
lemon juice
sea salt and pepper
Mix all the ingredients together until a thick paste forms. Taste, adjust to your liking. Add in a few tablespoons of water if desired to reach a thinner consistency.
Take your tortilla, spread some peanut sauce in the middle of your tortilla. Grab some chopped up red cabbage, spinach leaves, fresh coriander leaves and pile it up on top of the sauce. Slice an avocado and put a few slices on your veggie tortilla. Close up your tortilla  so the filling won´t run away and enjoy.

Och, ti prefikani Mexicania a tie ich vynikajuce tortilly! Ich zname tortilly su nieco medzi palacinkou a jemnym psenicnym cestom. Tradicne su pripravovane z psenicnej alebo kukuricnej muky a su schopne skryt do seba napln, po akejlen tuzite. Nech mate chut naozaj na hocico, vasa tortilla tu napln pysne skryje do seba.A potom, s kazdym hryzom objavite uzasne spojenie vsetkych chuti naraz-je to ako nejaka duha! Presne tak volam svoje tortilly ja-duhy (arcoiris po spanielsky:). Niekedy neverim samej sebe, kolko rozdielnej zeleniny som schopna natrepat do jednej tortilly.
Jednoduche, skromne ale uzasne jedlo-take su mexicke tortilly, ktore su ako nejake pojazdne vozidlo pre hocijake chutne fillingy(naplne) podla  vasej chuti. Ak mam byt uprimna, u nas sa pravidelne robia  tortilly aspon raz za tyzden, take je to skvele jedlo. A ked su tortilly hotove, uz do nich jednoducho len nahadzame to, co chladnicka v dany vecer ponuka.Pekne si ich zrolujeme aby nam z nich nic nevypadlo a zrazu je v celom byte ticho. Lebo sa ich nevieme dojest! :)
Dnes vam ponukam aj recept na vazne dobru omacku z arasidov, ktora sa naozaj vyborne hodi do vnutra tortil. Je to moj najoblubenejsi sposob ako si vychutnat tortilly-som znama tym, ze takto ich viem zjest aj tri-su vazne take dobre!
Nikdy som kupovane tortilly ani len nechytila do ruky a verim, ze ked sami vyskusate tie doma robene, taktiez po kupovanych uz nikdy nesiahnete. Ked ich vyskusate a pridete na to aka jednoducha je ich priprava, budete sa pytat samych seba preco ste ich nezacali robit doma uz davno! Takze nech sa paci, ide sa tortillovat! Vamos!
Oh, a este nieco. Ja robim doma tortilly zo spaldovej muky(pouzivam celozrnnu spaldovu a spaldovu hladku), lebo jednoducho nemozem vystat pocit, ze by som mala pouzit muku bielu, ktora je chemicky cistena, neobsahuje ziadne vyzivne latky, odvadza nam z tela prec dolezite ziviny a ktora je uplne bez chuti. A vysledok? Krasne jemne spaldove tortilly s delikatnou orieskovou aromou, ktore su plne vlakniny, vitaminov B a ktore vam zdvihnu naladu. Tak vidite? Ja vam uz davno hovorim aby ste sa zacali kamaratit so spaldou! :)
Domáce špaldové tortilly
(dostaneme cca 5 tortil, no to zalezi na velkosti)
1 salka spaldovej muky (ja pouzivam mix spaldovej celozrnnej a spaldovej hladkej)
poriadny splech olivoveho oleja (cca 2-3 lyzice)
velka stipka morskej soli
1/3-1/2 salky vody
V miske si zmiesame muku a sol. Pridame olej a 1/3 salky vody a vypracujeme si cesto. Pokial sa nam cesto nebude chiet spojit, pridame este vodu-kvapku po kavpke. Cesto by malo byt jemnucke a malo by sa s nim dobre pracoavat. Nemalo by sa lepit na ruky-ak sa lepi, pridajte muku.
Cesto si rozdelte na cc 5 casti. Kazdy kusok vyformujte dlanami do peknej gulicky. Pracovnu dosku si vysypte troskou muky a postupne vasich 5 kuskov cesta rozvalkajte valcekom (alebo poharom/flaskou!) na tenucke ´palacinky´.
Rozpalte si panvicu na vysoku teplotu. Ked je panvica horuca, polozte na nu jednu z vasich tortil a opekajte na suchej panvici asi tak 1 minutu. Preklopte tortilu a opekajte na druhej strane – na povrchu tortily by sa mali zacat objavovat bubliny. Ked je tortilla upecena, pokracujte so zvysnymi, kym ich vsetky neupeciete. Davajte si pozor aby ste ich nepiekli az prilis dlho, potom by vobec neboli ohybne a len tazko by ste si ich zakrutili. :)
Skladujte v lanovej utierke aby zostali teple dokym ich nezacnete podavat, no najlepsie je pustit sa do nich co ihned.
Ak vam nejake nahodou ostanu navyse, nechajte ich predsa len uschnut a mozte ich pouzit ako krekry ku oblubenemu dipu.
Seriozne dobrá arašídová omáčka
2 velikanske lyzice organickeho arasidoveho masla (bez pridaneho cukru, soli a oleja)
splech tamari omacky
trosku javoroveho sirupu alebo ryzoveho sladu
miso (moze byt, no nemusi-s nim je to extra dobre)
splech olivoveho oleja
citronova stava
morska sol a korenie
Vsetko spolu vymiesajte na hladku pastu. Ochutnajte a dochutte podla chuti. Mozte do omacky pridat aj zopar lyzic vody, aby ste dosiahli jemnejsiu konzistenciu.
Napokon si vezmite vase domace tortilly a na stred si natrite poriadnu vrstvu arasidovej omacky. Navrch poukladajte nakrajanu cervenu kapustu, cerstve spenatove listy, cerstve koriandrove listky, nejake to pokrajane avokado. A uz to pekne len vsetko stocte aby vam z tortilly nic neutieklo a pustite sa do toho! Dobru chut! :)

  1. Ahoj Alena! Väčšinou používam 3/4 šálky špaldovej celozrnnej a 1/4 šálky špaldovej hladkej. Veľakrát som robila tortilly len čisto celozrnné-tie boli tiež vynikajúce, no s cestom treba narábať citlivejšie a opatrnejšie. :) Snáď vám budú chutiť tak ako nám! :)
