Chickpea Pancakes. Cícerové palacinky.

 

I´ve been cheating on my boyfriend with chickpeas. I know it sounds horrible, but there was nothing else I could trust more than this humble balls of awesomness..
You see, my boyfriend is a bartender which means that he doesn´t get home until 3am. When he gets home, he kisses me with the intention of waking me up but all I am able to do is, that I nod my head for everything he says to me, then I kiss him and I never remember the rest. He might whisper the most romantic poems to my ear; he might complain about me being such a hard sleeper; he might tell me the most funniest story..but when I wake up in the morning, I never remember more than 3 minutes of our midnight talk, no matter how hard I try. Sometimes, that´s how we live 4 night in a row. Me, hybernating at night and waking up with the sun in the morning and my boyfriend coming home when the stars begin to dissapear from the sky.

And because I love company, I´ve decided that me and chickpeas will become bestfriends. It was not exactly love at first sight, though. I remember my mother cooking amazing soups and then boosting their nutritional value with adding beans in. A lot of times, she would put chickpeas in. When I dived into my soup and found this little ´balls´ I couldn´t eat anymore; there was something I just didn´t like about them. My brother, on the other hand, wanted to eat chickpeas only. So he kept looking for them as they were little treasures in his soup. And this was three years ago.

Now, I would eat chickpeas only. Put a bowl of boiled chickpeas in front of me and they´ll be gone within minutes. I am so addicted, that I keep buying 0,5kg bag of dried chickpeas everyweek. I boil them, I make hummus, I make lazy hummus, I blend them into soups, I make curry with them, I roast them, I mash them with vegetables and spread them on a piece of sourdough toast..I do love them. I also use the chickpea flour (gram flour) for making pancakes. And that´s something I want to show you today so you could bring some Indian flavours into your kitchen.

Chickpea pancakes are tipical for Indina cuisine. They stuff them with ´raita´ which is a creamy filling made with yoghurt, spinach leaves and seasoning-the recipe varies.
But trust me, these are so good, you can stuff them with whatever you´ve got in your fridge. Cooked beans, roasted vegetables,mashed sweet potatoes and avocado, peanut butter and banana. Yes, It is suprisingly tasty!

I also spice-up my chickpea pancakes to give them some extra yummy-ness and lovely flavour. You can also make them plain, if you prefer. I´m also giving you a recipe for an amazing tahini dressing which goes well with everything, especially these pancakes.

Chickpea Pancakes

1 cup gram flour (chickpea flour)
1 cup water
1/2 tsp ground cumin
1/2 tsp turmeric
1/2 tsp ground coriander
1/2 tsp mustard seeds (optional for an extra crunch)
pinch of cayenne pepper
pinch of sea salt
ghee or coconut oil for frying

 

Tahini dressing

4 tbls good quality extra virgin olive oil
1 tbls tahini (sesame seed butter)
1 garlic clove, minced
squeeze of lemon (or splash of apple cider vinegar)
sea salt
freshly ground black pepper

Making the dressing.
Put everything in a jar, cover with a lid and shake well. Taste, adjust seasonings and put away. Keep in the fridge for up to 1 week, but I doubt it will last that long. I could drink this stuff! :)

Making the pancakes.
Mix the flour with all the spices. Add about 1/3 of water and using a fork, mix the dough until a thick paste forms. Add in the rest of the water and stir. You´ll end up with a quite runny batter, but that´s ok. Now, put the batter to the fridge for at least 30 minutes. You could also leave it there overnight. This helps the flour to absorb water and it also makes it easier for you to flip the pancake over once you cook it.

When ready to cook, heat a pan over a medium heat and put 1/2 tsp of coconut oil or ghee in the pan to melt. When hot, take about 1/3 of the batter and pour it into the pan -you might want to swirl the pan until the batter spreads evenly on the whole surface. Cook for a few minutes and then gently flip over and cook for another minute or so. Repeat with the rest of the batter.
When ready to eat, simply fill your pancake with whatever you fancy and using your HANDS, enjoy every bit of it. I stuffed mine with boiled chickpeas, spinach leaves, caramelised red onions and tahini dressing. And yes, it was delicious. Enjoy!

Zacala som svojho chlapca podvadzat. S cicerom. Ano, viem, ze to znie naozaj strasne, ale nebol okolo mna nikto iny, komu by som mohla verit viac ako tym malickym gulockam uzasnosti…
Viete, moj chlapec je barman. Seriozny barman v serioznom koktejlovom bare na urovni :) Nikdy sa domov nevrati skor ako o 3tej. Ked pride domov, pobozka ma s tym zamerom, ze sa zobudim. Ale jedine na co sa zmozem je prikyvovanie hlavou na vsetko, co mi v noci povie, ked pride. Potom mu dam bozk a viac si uz nepamatam. Takze darmo mi on moze do uska sepkat krasne romanticke basne; darmo mi moze hovorit tie najvtipnejsie historky z dna; darmo na mna moze nadavat, ze som taky tvrdy spac.. Vzdy sa ked sa rano zobudim, nikdy si nepamatam viac ako 3 minuty z nasho nocneho rozhovoru. Nezalezi na tom, ako moc sa v noci snazim. Niekedy takto zijeme aj 4 dni v kuse. Cize som to ja, ktora hybernuje v noci a zobudza sa s vychodom slnka a moj chlapec, ktory chodi domov v case, ked sa hviezdam zacina zyvat a chcu ist spat a stratit sa z hviezdnej oblohy.

A pretoze zboznujem spolocnost, rozhodla som sa, ze ja a cicer budeme najlepsi kamarati. Poviem vam ale, nebola to zrovna laska na prvy pohlad. Pamatam si, ako mamina varievala tie najuzasnejsie polievocky a aby nejako zvysila nutricnu hodnutu jedla, vzdy do polievky hodila nejake fazulky. A povacsine to teda bol cicer. Vzdy ked som lyzicu ponorila do svojej misky a nasla tam tie male proteinove gulicky, nehcelo sa mi ani moc jest. Neviem preco, ale cicer som naozaj nemusela. Za to na druhej strane, moj brat ich vyslovene lovil z jeho polievky, ako keby to boli male poklady na dne oceanu. A tak to bolo 3 roky dozadu.

Teraz, jedine co by som jedla, je cicer. Polozte predomna uvareny cicer a zmizne za par minut. Som na non az tak zavisla, ze si kupujem 0,5 kilove vrecko ususeneho ciceru kazdy tyzden. Uvarim ho, spravim si hummus, spravim si lenivy hummus, pomixujem ho do polievok, robim z neho curry, peciem ho do chrumkava, popucim ho s pecenou zeleninou a vysostne polozim na hrianku z kvaskove chlebiku.. Naozaj ho zboznujem. Takisto pouzivam velmi casto cicerovu muku, robim z nej vyborne palacinky na indicky sposob. A to je prave to, co vam chcem dnes ukazat,aby ste aj vy doma zazili chute a vone Indie.

Cicerove palacinky su naozaj velmi typicke pre Indicku kuchynu. Tam ich plnia najcastejsie ´raitou´, co je jemna kremova napln pripravena z jogurtu, spenatu a roznych korenin-recept sa casto velmi lisi.

No ale verte mi, tieto su take skvele, ze ich mozete naplnit naozaj hocicim co mate v chladnicke. Varene fazulky, pecena zelenina, popuceny sladky zemiak a avokado, arasidove maslo a banan. Ano, naozaj, je to prekvapujuco skvele!

Taktiez svoje cicerove palacinky aj ozivujem indickymi koreninami aby som im dodala trosku viac charakteru a viac chuti. Ale taktiez ich mozte spravit jednoducho bez korenin, je to na vas. Ponukam vam aj recept na tahini dresing, ktory mozte vyuzivat na kadejaky recept, hodi sa naozaj na vsetko, specialne ku tymto palacinkam.

Cicerove palacinky

1 salka cicerovej muky
1 salka vody
1/2 lyzicky mletej rasce
1/2 lyzicky kurkumy
1/2 lyzicky mleteho koriandru
1/2 lyzicky horcicnych semiacok (moze byt ale nemusi; ja ich mam rada pre ich chrumkavost)
stipka cajanskeho korenia
stipka morskej soli
ghee alebo koskovy olej na vyprazanie

Tahini dresing

4 lyzice poriadne dobreho extra panenskeho olivoveho oleja
1 lyzica tahini (sesamova pasta)
1 strucik cesnaku, postruhany na jemnucko
splech citronovej stavy (alebo splech jablcneho octu)
morska sol
cerstvo pomlete cierne korenie

Priprava dresingu.
Vsetky ingrediencie spolu dajte do malej flasky. Uzavrite vrchnakom a riadne pomixujte, kym sa vsetko nespoji. Skladujte v chladnicke po dobu 1 tyzdna, ale pochybujem, ze vam tak dlho vydrzi. Je to skvely dresing, ktory sa hodi ku vsetkemu-ja ho dokazem aj pit len tak! :)

Priprava palaciniek.
Zmiesame si spolu muku a koreniny. Pridame asi 1/3salky vody a pouzitim vidlicky miesame, az kym sa nam neutvori husta kasa. Pridame zvysok vody a pomiesame. Malo by nam vzniknut pomerne riedke cesto, ale to je v poriadku. Cesto vlozime do chladnicky na najmenej 30 minut, mozme nechat aj cez noc. Toto umozni muke nasiaknut vodu a taktiez vam to pomoze k lahsiemu obracaniu palaciniek :). Ked ste pripraveni na varenie palaciniek, jednoducho si rpzohrejte palacinkar na strednej teplote. 1/2 lyzicky ghee alebo kokosoveho olejta dajte do panvici a pockajte kym sa roztopi a panvica nebude horuca. Vezmite si cca 1/3 salky cesta a vylejte na panvicu. Budete musiet panvicou trosku pokrutit, aby sa cesto pekne rozlialo po celej panvici. Pecte asi 2 minuty, potom cesto opatrne preklopte a pecte este asi 1 minutu. Opakujte zo zvysnym cestom, az kym ho cele nespotrebujete.
Ked ste vyhladovani a pripraveni jest, jednoducho si naplnte palacinky cim si len prajete. Ja som ich plnila uvarenym cicerom, spenatovymi listami, karamelizovanou cervenou cibulou a tahini dresingom. Ano, bolo to vyborne. Dobru chut!
