Creamy Broccoli and Coconut Soup. Krémová brokolicovo-kokosová polievka.

 

 

It seems like that cold weather doesn´t want to leave the British Islands. Even though we try to reject every sign of it, the winter is still in the house and we have to make the most out of these cold, windy and rainy days- charge our bodies up with vitamins and superfoods, put some cozy socks on, sneek under a warm blanket and enjoy lovely, hearty and nourishing warm soup that will make us happy again. And the greener the soup is, the better! :)

When we got home one night, half frozen and fully hungry, it was time to make us feel amazing again. There was a beautiful head of broccoli in our fridge so the decision was made. I put my grandma´s apron on and not even 20 minutes later on, I filled our soup bowl with this delicious broccoli and coconut soup sprinkled with spicy coconut crunch. And it was fabulous. A bit sweet from the coconut milk I´ve used, but with the right heat from that crunchy topping.

I´ve been making this soup quite often since then – I make sure that everytime I make it, there is some homemade sourdough bread left which we use instead of spoons.

Broccoli is an amazing source of calcium, magnesium, vitamins B3, B5 and C and also of folic acid. So not only it tastes amazing, it is great cleanser for your liver and the whole digestive tract. It is a strong antioxidant which helps strengthen your immune system. And, when cut up into smaller pieces, it looks like lego trees!

Coconut milk truly is the sweetest drink mother nature provides for us – yum! Full of potassium, vitamin C, zinc and good fats which help our brain and nervous system to work properly. Coconut enhances metabolism and fight against viruses and bacterias.

Creamy Broccoli and Coconut Soup

1 head of broccoli (and any leftover stalks of brocolli hanging around)
1 onion
4 garlic cloves
1/2 red chilli (or substitute with 1/2 tsp dried chilli flakes-or less if you don´t like the heat)
2 tbs ghee, butter or olive oil
100-150 ml coconut milk (use full-fat, please)
sea salt
freshly ground black pepper

For the Spicy Crunch Topping
handful of coconut chips
1 tsp ground cumin
1 tsp ground turmeric
1/2 tsp cayenne pepper
1/4 tsp ground cinnamon

Make your crunchy topping first. Put coconut chips in a pan over a medium heat and toast them until fragrant and lightly brown (watch out, they burn easily!). Turn the heat off and sprinkle the spices all over the chips. Toss everything in the pan to coat the chips evenly. Transfer to a bowl and let cool completely.
Now, make your soup. Heat up ghee,butter or olive oil in a wide pan over a low heat. Chop up your onion and add to the pan. Cook for about 10 minutes, until soft. Add garlic cloves and chilli (or chilli flakes) and cook for a bit longer (about 2-3 minutes, until the garlic no longer smells raw). Turn the heat up a bit. Now add your chopped broccoli and cook until bright green (3-5 minutes). Pour in just enough water or stock to cover the broccoli pieces, cover and simmer over low heat until tender(don´t over cook your broccoli). When tender, pour in the coconut milk. Blend everything together using a hand blender until smooth. Return to the pan and cook for a bit more (2-5 minutes). Add salt and pepper. Taste and adjust seasoning. The soup should be creamy, silky smooth and should taste a bit sweet and spicy. If you want, you could use more coconut milk, to make your soup more creamy.
When ready to serve, divide into soup bowls, sprinkle over some of your spicy crunch topping, drizzle with a bit of olive oil, sprinkle over some chilli flakes if you fancy and dig in.
And, if you´re feeling very fancy, you could serve the soup with some nice loaf of rye bread. Enjoy!

Tak sa mi zda, ze ta pani zima naozaj neche odist z Britskych ostrovov. Uvelebila sa tu a my z toho musime vytazit co najviac – dobit telo vitaminmi, zahriat telo, navliect si na nohy nejake teple ponozky, potmehucky sa skryt pod deku, a pohladit dusu nejakou vyzivnou, zdravou a tepluckou polievkou, ktora nas zase spravi stastnymi. A cim je ta polievka zelensia, tym lepsie! :)

Ked sme sa raz vratili domov, napol zmrznuti a celkom vyhladovani, bolo nam treba nieco na zahriatie aby sme sa zase citili skvelo, uzasne a hlavne aby nam bolo teplo. Z chladnicky na mna kyvala krasna hlava brokolice, takze bolo rozhodnute. Obliekla som si zasteru od starkej a ani nie za 20 minut som nam misky na polievky naplnila touto uzasnou brokolicovo-kokosovou polievkou s pikantnym chrumkavym topingom. A bola naozaj uzasna. Krasna kremova, zelena, sladka z kokosoveho mlieka, ktore som pouzila a trosku pikantna zo skveleho chilli kokosu.

Odvtedy zvyknem varit tuto polievku dost casto (obom nam neskutocne chuti) – a vzdy ked ju varim, uistim sa, ze mame nejake zvysky domaceho kvaskoveho chlebika, ktore pouzivame namiesto lyzic.

Brokolica je uzasny zdroj vapnika, megnezia, vitaminov B3, B5 a C a taktiez je skvelym zdrojom kyseliny listovej. Takze nielenze dobre chuti, je to aj vyborna ´kefa´ na vasu pecen a celu traviacu sustavu, je vyborna aj ako antioxidant cize napomaha posilnovat cely imunitny system. A ked je rozdrobena na male kusky, vyzera ako keby vsetky tie malicke kusky boli stromceky z lego stavebnice!

Kokosove mlieko je ako ten najsladsi napoj z prirody – mnam! Je plne potasia, vitaminu C, zincu a dobrych tukov, ktore napomahaju k spravnemu fungovaniu mozgu a celej nervovej sustavy. Kokos podporuje metabolizmus a bojuje v tele proti bakteriam a virusom.

Krémová brokolicovo-kokosová polievka

1 hlávka brokolice (a hocijake prebytocne kusy brokolice, co sa len tak povaluju v kuchyni)
1 cibula
4 struciky cesnaku
1/2 chilli papricky (alebo 1/2 lyzicky susenych cilli vlociek)
2 lyzice ghee, masla alebo olivoveho oleja
100-150 ml kokosoveho mlieka (prosim, pouzite to riadne – plnotucne)
morska sol
cerstvo pomlete cierne korenie

Na chrumkavý chilli toping
hrst kokosovych lupienkov
1 lyzicka mletej rasce
1 lyzicka mletej kurkumy
1/2 lyzicky mleteho kajanskeho korenia
1/4 lyzicky mletej skorice

Najprv si pripravte chilli toping. Na suchej panvici si oprazte kokosve lupienky, az dokym nechytia jemnu hnedastu farbu a dokym nebudu krasne vonat (budte opatrny a nespustajte kokos z oci, dokaze velmi rychlo zhoriet). Ked ma zlatavu farbu, poypte ho vsetkymi koreninami, rychlo premiesajte v panvici, prelozte na tanier a dajte bokom vychladnut.
Zoberte si hrniec, kde na slabom ohni zohrejte ghee,maslo alebo olivovy olej, pridajte nakrajanu cibulu a orestujte do makka (cca 10 minut). Pridajte nakrajany cesnak, chilli (alebo chilli vlocky) a orestujte este o par minut naviac. Zvyste ohen na stredny plamen, pridajte umytu a nakrajanu brokolicu, zalejte vodou alebo vyvarom, zakryte a nechajte varte, dokym brokolica nezmakne(pouzite len take mnozstvo vody, aby bola brokolica v hrnci ponorena). Ked brokolica zmakne (15-20 minut), pridajte ku nej kokosove mlieko, vezmite si ponorny slahac a vsetko spolu vymixujte do hladka. Vratte nazad nad plamen, osolte, okorente, popripade pridajte viac kokosoveho mlieka ak chcete dosiahnut jemnejsiu konzistenciu a este chvilku povarte (2-5 minut).
Ked je polievocka hotova, rozdelte ju do misiek, navrch nasypte trosku vaseho pripraveneho kokosoveho topingu, pokvapkajte polievku troskou olivoveho oleja, mozte dozdobit chilli vlockami a podavajte.
A ak sa citite trosku specialne, mozte polievku podavat s nejakym krasnym kusom razneho chleba.
