Cennellini Bean Mash and Amazing Baked Chips. Cannellini dip a úžasné pečené chipsy.

This is hardly a recipe, but if it is, it´s a good one!
Mashing up some beans with thyme or whatever herbs you´ve got on hand might be exactly what you need on a busy night when you come home from work and don´t feel like cooking. Chop up some raw veggies to eat it with or bake yourself some nice vegetable chips and you´re dinner will look like Jamie Oliver came to cook for you. Well, almost like that.
These baked chips that I´ve got here for you are truly amazing – baked instead of fried; healthy and nourishing instead of imflammatory; crispy instead of greasy and soggy. Simply bake them and eat them with whatever you fancy. They are smashing with this canellini bean mash as they add an extra crunch when you eat. But they are delicious with anything and everything, really. Use it everywhere where you would use a spoon! :)
Cannellini Bean Mash with Amazing Baked Vegetable Chips
Cannellini Bean Mash
 
1 can of cannellini beans, drained (or soak and boil your own)
2 garlic cloves (chopped)
olive oil, sea salt, pepper
a few strigs of fresh thyme, leaves picked (rosemary works well as well)
For making the mash, you´ve got 2 choices. You can simply blend all the ingredients together and serve, or you can sautee the garlic cloves with the thyme leaves until fragrant and then blend it/mash it with with the rest of the ingredients. You can add a few tablespoons of water into the mash to get the desired consistency. Also, I don´t blend it or mash it until super smooth – I like being able to bite into random beans that are left whole.
The Amazing Baked Vegetable Chips
 
vegetable of your choice, washed (sweet potatoes, beetroot, carrot, parsnip..)
olive oil
sea salt, pepper
polenta
Preheat your oven to 220°C. Slice your vegetables(you can leave the skin on if organic) into thin slices. Run under cold water and dry out with paper towel. Coat them lightly in olive oil, salt and pepper. Sprinkle polenta all over them and coat once again. Arrange them on a baking sheet (no need for a baking paper) in single layer. Put to the oven and bake for  about 20-25 minutes until crispy. You might turn them over after first 15 minutes.
Transfer in a bowl and leave to cool. You might be tempted to start snacking on them, but please, stay strong.
When ready to serve, simply drizzle your mash with a bit more olive oil and using your hands (and your fabulous chips) dig in! Serve alongside some nice green salad or raw vegetables.

Niekedy, popucenie par fazuliek s cerstvymi bylinkami za pomoci jednoducheho nastroja ako je vidlicka, znie ako ta najlepsia vecera na svete. Hlavne, ked pridete domov s hrozostrasnym vlcim hladom a clenovia rodiny pred vami musia utekat, lebo by ste zjedli aj ich! :) Tak presne pre vas je tento recept, kde vidlickou popucite co treba, nakrajate si ku tomu nejaku krasnu zeleninu a vecera sa moze podavat. Alebo si ku tomu upecte skvele zeleninove cipsy a budete vyzerat ako keby vam veceru pripravil Jamie Oliver. Skoro. :)
Tieto pecene chipsy, co som si tu pre vas pripravila, su v skutku uzasne – namiesto vyprazania som ich upiekla; namiesto toho aby vo vasom tele vytvarali zapaly su nutricne vyzivne; namiesto aby boli mastne a vlhke su uzasne chrumkave. Jednoducho ich len upeciete a mozete ich podavat s cim len chcete. Naozaj skvelo sa hodia k dipom ako je tento, pretoze mu dodaju extra chrumkavost. Ale, mozte ich podavat naozaj s hocicim;s hocicim, kde by ste na podavanie jedla pouzili lyzicu! :)

Cannellini Dip
 
1 konzerva/skatulka uvarenych canellini fazuliek, ocedene (alebo si namocte a uvarte vlastne)
2 struciky cesnaku (pokrajane)
olivovy olej, morska sol, korenie
par vetviciek cerstveho tymianu, odstopkovane (tiez mozte pouzit cerstvy rozmarin)
Na pripravu dipu mate dve moznosti. Jednoducho mozte vsetko spolu popucit (vymixovat) a rovno podavat, alebo si rozohrejte na panvici olivovy olej, pridajte cesnak a tymianove listky, poohrejte kym to nevonia uzasne a spolu s ostatnymi surovinami popucte alebo vymixujte. Taktiez mozte do zmesy pridat trosku vody aby ste dosiahli pozadovanu konzistenciu dipu. Ja tento dip nemixujem az do super hladka, nakolko mam rada, ked sem tam zahryznem do nahodnej fazulky, ktora zostala cela.
Úžasné pečené chipsy
 
zelenina podla vlastneho vyberu (sladke zemiaky, cervena repa, mrkva, petrzlen..)
olivovy olej
morska sol, korenie
polenta
Predhrejte si ruru na 220°C. Nakrajajte si zeleninu na rovnako hrube platky (ak mate kvlaitnu zeleninu, nie je potreba ju supat, len ju poriadne umyte. Nakrajane platky zeleniny poumyvajte pod tecucou vodou a osuste. V mise ju zmiesajte spolu s olivovym olejom, solou a korenim. Posypte polentou a este raz riadne premiesajte. Zeleninu poukladajte na pekac (nemusite vobec vystlat papierom na pecenie) v jednej vrstve a dajte do rury. Pecte asi tak 20-25 minut, dokym zelenina nie je krasne chrumkava. V polovici pecenia mozte zeleninu poobracat.
Po upeceni nechajte vychladnut. Asi vas bude lakat ich vsetky zjest, ale vydrzte, nechajte si ich ku dipu. :)
Na zaver pokvapkajte vas dip s troskou olivoveho oleja a za pomoci ruk (a vasich skvelych pecenych cipsov) sa s chutou pustite do jedenia! :) Mozte servirovat s nejakym krasnym zelenym salatom alebo surovou zeleninou.
