Morning Millet Pudding. Pšenová raňajková kaša.

As the cold winter months come, we all crave nourishing food that make us warm and cozy. Especially in the morning, when the alarm goes on and we have to sneak out of our warm bed unwillingly, put a knitted sweather on and wake up every single cell in our body while the heavy rain knocks on our windows in these dark mornings.
But even mornings like these are like a celebration to me; a celebration of new day filled with new amazing things that can happen.
Here, in Britain (and in Slovakia as well), people love starting their days with some crunchy granola or with a bowl of warm and creamy porridge. But if your are tired and bored of snacking on that amazing homemade granola and if you feel like not eating the creamiest porridge but still want to have something nice, nourishing and warm, here you are. morning pudding made out of one of the oldest grains mother Earth gave us, the humble but amazing millet. Cooked millet is deeply satisfying, which means that you don´t need to eat loads to feel full and happy(even though I could easily eat both portion at one sitting!). And, if you add a tablespoon of your favourite nut butter on top (or 2-3 tablespoons as I normally do), you can be pretty excited about the goodies you got yourself into that bowl – plant proteins, fibre, healthy fats and potassium.

Morning Millet Pudding
(serves 2)
1/2 cup millet
2 1/2 cups milk of your choice (coconut milk, homemade nut milk, or even water)
pinch of sea salt
splash of vanilla extract
1 large banana (or 2 small), mashe with fork
nut butter
seeds for sprinkling

Rinse your millet. Soak in the double the volume of water with a pinch of sea salt overnight (this helps the millet to remove the bitter tasting coating and the protective layer, which makes it hard to digest).
In the morning, drain and rinse your millet. Add to a medium size pan with 2 1/2 cups milk and a tiny pinch of sea salt. Bring to a boil, lower the heat and simmer gently until tender (or soft if you prefer) and fluffy. Turn off the heat. Mix in the vanilla extract and the mashed banana (it will become so creamy!!), divide into bowls.  Top up beautifully with nut butter, sprinkle with some seeds and enjoy while still warm and delicious.

Ked k nam prichadzaju tieto chladive zimne mesiace, vsetci tuzime po jedle, ktore potesi dusu a zahreje telo. A to hlavne rano, ked nam zazvoni budik, musime sa vytackat spod teplej periny aj ked necheme; ked si na seba navlecieme hrubansky strikovany sveter po starej mame a snazime sa prehovorit kazdu bunku v nasom tele aby zacala fungivat v taketo tmave a zimne rana, zatial co nam na okno klopu silne kvapky dazda.
Aj v takomto pocasi su pre mna kazde ranajky sviatkom a oslavou niecoho noveho a skveleho, co den prinesie.
Tu, v Britanii (a casto aj na Slovensku), je popularne zacat den s crhrumkavou granolou alebo teplou a kremovou ovsenou kasou – porridge. Ale ak ste uz prejedeni a unaveni z toho, ako dookola chrumete tu uzasnu, doma upecenu granolu a ak nechete vyjedat tu najkremovitejsiu ovsenu kasu ale chete zostat pri niecom hrejivom, vyzivnom a chutnom, nech sa paci. Ranajkova kasa uvarena z jednej z tych najjednoduchsich a najstarsich obilnin zeme – zo skromenho ale uzasneho psena. Uvarene pseno je naozaj vyzivne, takze toho naozaj nemusite zjest plny tanier aby ste sa citili stastni a naplneni(aj ked ja by som naozaj mohla zjest obidve porcie na jedno posedenie!). A ak si navrch date za lyzicu orieskoveho masla (alebo za 2-3, ako to robim ja), mozte sa tesit porcii rastlinnych proteinov, vlakniny, zdravych tukov a potasia.

Chutne rana vam prajem!

Ranajkovy psenovy puding
(2 porcie)
1/2 salky psena
2 1/2 salky mlieka (kokosove mlieko, domace mlieko z orieskov, alebo postaci aj voda)
stipka morskej soli
splech vanilkove extraktu
1 velky banan (alebo 2 mensie), najlepsie prezrety; popuceny vidlickou
orieskove maslo
semiacka na posypanie

Premijeme si pseno. Namocime ho do dvojnasobneho objemu vodu a so stipkou soli nechame namocene cez noc (namacanim sa zbavime tej horkej vrstvy, ktoru pseno ma a taktiez pre nas bude pseno lahsie stravitelne). Rano pseno precedime a preplachneme. Dame do hrnca spolu s mliekom a mlickou stipkou soli. Privedieme do varu, stisime teplotu a varim do zmaknutia, az kym z toho nebude jemna kasa. Odstavime z ohna, primiesame vanilkovy extrakt, popuceny banan (ten banan naozaj zjemni konzistenciu kase – stane sa z toho nieco krasne a kremove). Rozdelime do 2 misiek. Kasu krasne ozdobime orieskovym maslom, posypme semiackami. Podavame teple, hned a zaraz! Dobru chut :)
