Homemade Nut Milk. Domáce mlieko (z orieškov a semiačok!).

Have you ever tried making your own nut milk? Did I hear you saying no? Well, in that case, you should try it out. It is really simple to make, it tastes delicious (much better than store bought versions, where the maximum of only 6% nuts is used!) and it is very beneficial for your health. Germinated seed and nut milks are amazing substitutes for regular milk; contain complete proteins of a superior biological value, capable of maintaining great health conditions. For some, nuts and seeds might be difficult to digest – soaking and germinating is the best way for making it a smoother experience(it helps them to become alive again, it increases their enzyme content as well). Oh, and it makes the creamiest porridge ever..
Give it a try, there are many flavour variations you should try so keep tasting (and keep milking!).

What you´ll need for making about 3 cups of this amazing nut milk:
1 cup raw nuts (or seeds) of your choice (hazelnuts, almonds, brazil nuts, cashews,..)
3-4 cups filtered water (3 cups for creamier consistency)
a pinch of sea salt
flavourings (vanilla bean, cinnamon stick, cardamom seeds, cloves, star anise..)
cheesecloth
large, airtight glass bottle for storing your milk
powerful blender

At first, start by soaking your nuts (or seeds) in a double the amount of (filtered) water with a pinch of salt. The more you soak your nuts, the creamier the milk you´ll get. You can soak almonds, hazelnuts and seeds for up to 2 days, changing the water every 12 hours; cashew nuts and brazil nuts should be soaked for about 4-6 hours only – after that they become very soggy.
When you´ll be ready, strain and rinse your nuts, put them in a blender with filtered water and a pinch of sea salt and blend on high speed untill creamy (couple of minutes).
If you wish, you can now strain your milk using a cheesecloth – squeeze the cloth with your hands to get every last drop of milk (use the pulp in cakes instead of flour), transfer to your bottle, add flavourings of your choice and store in the fridge for up to 3 days.

Vyskusali ste si niekedy vyrobit domace mlieko z orieskov a semiacok? Ze nie? Tak v tom pripade, by ste to naozaj mali vyskusat. Je to velmi jednoduche, neskutocne chutne (omnoho chutnejsie ako tie kupovane verzie, kde je mnozstvo pouzitych orieskov maximalne 6%) a vplyva velmi zdravo na nase zdravie. Orechy a semiacka, ktore boli namocene a naklicene, sa stavaju zdrojom kompletneho proteinu. To, ze ich namocime, ich donutime aby zacali byt znova ´zivymi´-ako keby sme v nich prebudili znova zivot. Tymto procesom sa zvysuju ich skvele hodnoty mineralov a vitaminov, zvysuje sa aj mnozstvo enzymov(zive bakterie), ktore nam pomahaju vstrebavat vsetko to dobre z jedla, ktore prijmeme. Je to naozaj uzasna vec, to klicenie, stare ako tie najstarsie civilizacie, ktorym toto praktizovali deno denne; dokonca, semiacka a orechy pripravovane tymto sposob su jednoduchsie aj na stravenie (co moze byt skvela sprava pre vsetkych, ktory si s nafukovanim po zjedeni orechov nemohli dat rady..).Oh, a skoro by som zabudla-s takymto domacim ´mliekom´ si mozete pripravit tu najkremovitejsiu ranajkovu kasu na svete!).
Existuje naozaj vela chutnych variacii, ktore stoja za vyskusanie. Tak pripravit sa, pozor, ide sa dojit! :)

Na vyrobu asi tak 3 poharov mlieka budeme potrebovat:
1 pohar surovych orechov (alebo semiacok) podla vasho vyberu (mandle, lieskovce, para orechy, kesu..)
3 pohare (filtrovanej) vody
stipka morskej soli
koreniny podla chuti (cela skorica, kardamomove semiacka, klinceky, aniz..)
lanovu utierku (alebo bavlnenu plienku:)
silny blender (mixer-moze byt aj rucny ponorny)
sklenena flasa na uzatvaranie

Najprv si namocte orechy (alebo semiacka) do dvojnasobneho mnozstva vody so stipkou soli. Mandle a lieskovce mozte nechat namocene az na dva dni – cim dlhsie ich nehate namocene, tym kremovejsia bude konzistencia mlieka (vodu treba vymenit kazdych 12 hodin); para orechy a kesu orechy namocte na maximalne 4-6 hodin (po 6 hodin su velmi mazlave a stracaju svoju strukturu).
Ked mate orechy namocene a ste pripraveny ´dojit´, orechy precedte a premite. Dajte do nadoby s 3 poharmi (filtrovanej) vody a stipkou morskej soli a yacnite mixovat, dokym vam nevzvnikne kremove mlieko (potrva to par minut).
Ak si zelate, pomocou bavlnenej utierky/plienky mozete mlieko ocedit a pomocou ruk vytlacit z utierky poslednu kvapku mlieka (ja osobne si mlieko necedim, pouzivam h aj so vsetkymi orieskovymi ´smetami´). Mlieko prelejte do flase, v ktorej ho budete uskladnovat. Pridajte koreniny podla chuti a skladujte v chladnicke po dobu 3 dni.
