Autumn Almond and Plum Crumble. Pečené jesenné slivky s mandľovou mrveničkou.

When you walk down the street and you can hear the fallen leaves crunching below your feet, you know that autumn has come. The days are colder, darker, filled with foggy mornings and cold evenings. When this weather comes, we feel like staying home all day with a hot mug of tea in our hands.
I love this time of the year. There was always the amazing smell of apples and cinnamon coming out of the kitchen, when my grandma baked. Or when my mom took me for a walk to the woods and we just adored all the beautiful trees changing color.
Because I now live with my boy only, it is me who puts all the autumn spices into cooking (and mostly baking!), to make us feel pampered, warm and cozy. (And to make our home smell totally irresistiible!).
We always loves baked fruit in our family. So when it comes to crumble, there are never leftovers, it somehow all disappears. And that´s what happenned on an autumn Sunday night. I made crumble  and  took it our from the oven. It was bursting with the amazing and unbeatable flavours of baked plums with cinnamon and warm almond topping. I turned the oven off, and served us this delicious crumble, still hot and bubbling. I topped it up with a bit of plain yoghurt mixed with homemade vanilla extract..and the rest felt like heaven. Me and my boy, cuddled up in our bed, with blanket all around us, enjyoing hot plums with delicate vanilla sauce, spoon after spoon.
Oh, and in the morning? There were no leftovers! Now, I will HAVE to make a new cake, what a disaster, for cake sake! :)

Ked sa prechadzate po ulici a pri kazdom jednom kroku pocujete pod nohami ten suchot popadanych listov, viete, ze prisla jesen. Dni su zrazu chladnejsie, tmavsie, plne hmlistych ran a tmavych vecerov. No a ked k nam pride taketo pocasie, necitime sa na nic ine ako na zostatie doma pod dekou, s hrncekom caju k tomu.
Napriek vsetkemu, toto obdobie v roku mam velmi rada. Pamatam si, ako vzdy na jesen bolo z kuchyne citit tu uzasnu vonu pecenych jablcok a skorice, ked starka piekla kolac. Pametam si ako ma mamina bravala na prechadzky do lesa a spolu sme obdivovali stromy ako menia farby.
Kedze teraz zijem iba s mojim chlapcom, je na mne, aby som nam do domu vniesla vsetky tie jesenne vone cez varenie (a hlavne pecenie!) aby sme citili to uzasne teplo domova a aby som nas trosku rozmaznavala. (A aby nam nas domov vonal uplne nedoolatelne!).
V nasej rodine sme vzdy zboznovali pecene ovocie. Takze, ked pride narad crumble/zapecene ovocie s posypkou, viete si predstavit, ze nikdy nie su ziadne zvysky a vsetko tak nejak zmizne. A tak isto to bolo aj v tento jesenny nedelny vecer. Pripravila som crumble a upecene ho vytiahla z rury. Celou kuchynou sa zacala sirit ta uzasne neprekonatelna vona upecenych slieviek so skoricou s vonavou mandlovou posypkou. Vypla som ruru a crumble sa islo podavat. Stale vriace crumble som nabrala do misiek, po boku som ho poliala creme fraiche zmiesany s domacim vanilkovym extraktom..a co bolo potom bolo ako v krasnej rozpravke. S chlapcom sme sa ulozili do postele, zakryli teplou dekou vsade okolo a uzivali sme si pecene slivky s delikatnym vanilkovym kremom, lyzicu po lyzici.
A, co sa stalo v nasledujuce rano? Znova ziadne zvysky! Teraz budem MUSIET zase nieco upiect, uplna otrava! :)

 
























Autumn Almond and Plum Crumble

500g plums, roughly cut (frozen work really well, they give you an extra ´sauce´ on the bottom of the pan-make sure to thaw them before, 30 minutes should do)
1 tsp ground cinnamon
1 tbs maple syrup (or honey)

1 cup oats (or oat flour-simply grind your oats in a food processor, reserving some oats whole)
1/2 cup almond flour
small handful chopped almonds
butter (or coconut oil)
maple syrup (or honey)
1/2 tsp vanilla extract
1/2 tsp almond extract
pinch of sea salt

First, make your crumble. Mix together oats (or oat flour), almond flour, salt in a bowl. Add butter, maple syrup, vanilla and almond extract and using your fingers, rub it into the oat mixture. After a few minutes, you should end up with chunks of crumble. Mix in your chopped almonds and set aside.
Mix your plums with cinnamon and transfer them onto baking pan. Drizzle with maple syrup (or honey). Sprinkle over your crumble.
Bake at 180°C for about 20-30 minutes, until golden brown and crunchy on top.
Enjoy on its own, or dollop with creme fraiche mixed with a splash of vanilla extract, or with dollop of plain yoghurt.

Pečené jesenné slivky s mandľovou mrveničkou

500g sliviek, vykostkovanych, pokrajanych na vascie kusky (mozete pouzit aj mrazene-vytvori sa vam extra ´omacka´ na spodku formy pri peceni-nechajte ich ale pred pecenim rozmrazit aspon 30 minut)
1 lyzicka mletej skorice
1 lyzica javoroveho syrupu (alebo medu)

1 salka ovsenych vlociek (alebo pomletych vlociek-jednoducho len pomelte vlocky v mixeri)
1/2 salky mandlovej mucky (mletych mandli)
mala hrst posekanych mandli
maslo (alebo kokosovy olej)
javorovy syrup (alebo med)
1/2 lyzicky vanilkoveho extraktu
1/2 lyzicky mandloveho extraktuň
stipka soli

Najprv si pripravte posypku. Zmiesajte spolu ovsene vlocky (alebo ovsenu mucku), mandlovu mucku, sol. Pridajte maslo (alebo kokosovy olej), javorovy syrup (alebo med), vanilkovy extrakt, mandlovy extrakt a prstami spolu vsetko premiesajte. Po par minutach by ste mali ziskat strukturu mrvenicky. Pridajte posekane mandle, jemne premiesajte a dajte bokom.
Zmiesajte spolu slivky a skoricu. Vysypte na spodok zapekacej formy. Pokvapkajte javorovym sirupom (alebo medom), posypte pripravenou mrvenickou. Dajte piect do rury, vyhriatej na 180°C, na cca 20-30 minut dokym nie je posypka zlata a chrumkava.
Podavajte samotne, alebo s creme fraiche vymiesanym so splechom vanilkoveho extraktu, alebo lyzicou bieleho jogurtu.
