Morning Granola Crunch. Chrumkavé raňajkové musli.

There are days and weeks, when life just drags you into its speed and the time literally flies by. Then it slows down a but and you have a bit more time for doing things that you love. Like having a hot bath, reading a book, listening to a classic vintage songs and pouring yourself tea, cup after cup, or you can write a blog. And that´s what I´m doing right now. Listening to vintage songs and writing this blog post.
The last 5 weeks were adventurous. I´ve started working in my new job (in the most beautiful vintage tea room ever; ergo the classic vintage songs), I´ve been on holiday in my homeland (nobody expected me to come home, so you can imagine how shocked my family was when I´ve appeared in front of them after 7 months of me being away), our dear friend from Slovakia came to visit us in Plymouth (so we´ve walked five hundred miles and we walked five hundred miles..all over Plymouth and Devon)..and now, on a beautiful Sunday morning when everybody is asleep and the world will be slowly waking up, I´m pouring myself a cup of tea and I´m enjoying the present (with you). That´s what the precious time spent with my family has taught me – being grateful for each and every moment life is giving us.
Although I didn´t have time to post anything in a longer period of time, I´ve been cooking and  baking even more then ever before. I enjoy the time in the kitchen with my grandma´ apron on..

Because people struggle with eatig breakfast and always find ways how not to eat in the morning, I´ve created the ultimate granola recipe, which you´ll love and won´t be able to stop eating! :) When you´ll put it to the oven, you´ll start smelling an amazing caramel aroma after about 15 minutes, that will make you stay in the kitchen and will make you sniff to the oven door.
And, what´s great about this recipe is, that you can load it up with whatever nuts, seeds and oats you´ve got in your cupboard – you really can adapt the recipe to your likings. After only your first batch of this morning granola crunch, you´ll be whipping up batches after batches so easily! Nothing beats a homemade granola. After baking this delicious granola, you´ll hopefully never reach for a store bought version again. Good morning!
ps. When put into cute little glass jars, it makes the best edible Cristmas gift for friends and family!

Morning Granola Crunch

1 cup rolled oats
1 cup rolled rye (rye oats)
1 cup nuts (almonds, hazelnuts or walnuts), roughly chopped
handful of coconut chips (flaked coconut)
1/2 cup mix of pumpkin seeds and sunflower seeds
1/4 cup linseeds (golden, brown or mix of both)
1 tsp spices (ground cinnamon, ground cardamom, ground ginger, ground vanilla..)
4 tbls coconut oil (cold-pressed, virgin coconut oil)
2 tbls pure maple syrup (for the flavour purposes only, you don´t want your granola to be very sweet)

Preheat the oven to 140°C. Put the coconut oil and maple syrup in a heatproof bowl (I use my favourite enamel cup) and put it to the oven to melt it down. Meanwhile lined 2 baking sheets with baking paper.
In a bowl, mix together oats, nuts (except coconut chips),seeds and your chosen spices. Mix well. When the oil and maple syrup is melted, pour it on your granola mixture and combine everything. Divide the granola mixture onto your prepared baking sheets and put to the oven for about 40-50 minutes, stirring every 15 minutes to prevent it from burning. 5 minutes before removing from the oven, stir through the remaining ingredient – flaked coconut.
Bake until nice, crunchy and golden. Let cool and store in an air tight jars.

Note: Once cooled, xou could add some dried fruit to the mix as well (cranberries in winter months, raisins thorughtout the summer months..). Because I eat my granola crunch with fruit, I omit adding the dried fruit to it.

V zivote su dni a tyzdne, kedy vas zivot pohlce svojou rychlostou a ani sa nenazdame a cas neskutocne rychlo leti. Potom sa zase vsetko dostane do normalu, tempo vsetkeho sa trosku spomali a najdeme si cas na veci, ktore zboznujeme robit. Mame cas na horuci kupel, na precitanie si dobrej knihy (alebo aspon par kapitol z knihy), zapneme si klasicke jazzove pesnicky z ´vintage´ ery a nalejeme si skvely caj, salku po salke..alebo napiseme novy post na blog. A to je prave to, co robim. Pocuvam uzasne vintage piesne a pisem pre vas :)

Mojich poslednych 5 tyzdnov bolo naozaj dobrodruznych (a sialenych). Zacala som pracovat v novej robote (v jednej z tych najkrajsich cajovni, do akych len mozete vstupit; preto tie vintage pesnicky), bola som na dovolenke v mojej rodnej zemi (nikto ani len netusil, ze prichadzam, takze si mozete predstavit ten sok na tvarach ludi, ked som prisla domov po 7mich mesiacoch), navstivil nas nas priatel zo Slovenska (kracali sme kilometre a kilometre po krasach v Plymouthe a Devone)..a teraz, v krasne nedelne rano, ked vsetci spia a svet sa zachvilku zacne prebbudzat, nalievam si salku caju a uzivam si pritomnost. To je to, co ma naucil cas straveny s mojou rodinou – byt vdacna za kazdy jeden moment, co zivot ponuka. Takze tak aj robim. Varim, peciem, jem, zijem :)

Aj ked som nemala cas na zverejnenie prispevkov uz dlhsi cas, neznamena to, ze som nic nepiekla a nevarila. Prave naopak, varim a peciem viacej ako kedykolvek predtym, uzivam si cas v kuchyni, ked mam na sebe oblecenu zasteru svojej starkej, v ktorej sa toho navarilo uz naozaj hodne. Takze, mozte sa tesit na nove recepty, ktore vas dufam budu inspirovat na pripravu zdravsich jedal a na pecenie uzasnych (zdravych) kolacov. :)

Kedze ludia maju problemy s ranajkami a vzdy si najdu nejaku vyhovorku, preco ich nejest, vymyslela som ranajkove musli, ktore vam bude tak chutit, ze ho nebudete vediet prestat jest. Je naozaj vyborne! Ked date piect toto musli, za par minut sa budete citit ako v sladkom, karamelovom nebi a ta vona musli, vas prinuti byt v kuchyni a vonat vsetky tie uzasne chute, ktore sa budu tlacit z rury von.
Tento recept je vyborny, lebo si ho mozete doladit podla svojej chuti. Mozete pouzit mix orieskov a semiacok podla toho, co mate prave doma – naozaj si mozete prisposobit tento recept vasim chutiam. Ani sa nenazdate a po upeceni prvej davky musli si takto budete vypekat ranajky naozaj casto – je to naozaj neprekonatelna chut, ked si takuto dobrotu budete piect sami doma. Presne viete co do musli date a kupovanu zmes si po vyskusani tejto zmesy nikdy nekupite. Dobre rano!

Ps. Tato musli zmes vyzera v malych sklenenych flastickach tak dobre, ze sa velmi dobre hodi ako vianocny darcek pre priatelov, znamych a rodinu!

Chrumkave ranajkove musli

1 salka ovsenych vlociek
1 salka raznych vlociek (mozete nahradit pohankovymi alebo vsenymi)
1 salka orieskov (mandle, lieskovce alebo vlasaky), nahrubo pokrajane
1/2 salky tekvicovych a slnecnicovych semiacok
1/4 salky lanovych semiacok (zlatych, hnedych alebo mix obidvoch)
hrst kokosovych lupienkov
1 lyzicka korenin (mleta skorica, mlety cardamom, mlety zazvor, mleta vanilka..)
4 lyzice kokosoveho oleja (mozete nahradit maslom alebo olivovym olejom)
2 lyzice cisteho javoroveho sirupu (sluzi nadodanie chuti a aromy do musli, nie ako sladidlo, tak to neprezente)

Ruru si predhrejeme na 150°C. Do ohnovzdornej misy dame kokosovy olej a javorovy sirup a vlozime do rury, aby sa nam obidve tekutiny roztopili.
Dva plechy na pecenie si vylozime papierom na pecenie.
V mise si zmiesame vsetky suroviny okrem kokosovych lupienkov. Ked sa namolej a sirup roztopili (trva to par minut), primiesame ich ku vlockovej zmesi. Poriadne premiesame a rozprestreme na nase pripravene plechy. Vlozime do rury a pecieme cca 40-50 minut. Kazdych 15 minut zmespremiesame aby sme zabranili prihoreniu a aby sa nam musli opieklo z kazdej strany. 5 minut pred koncom pecenia na plechy pridame kokosove lupienky a premiesame.
Pecieme dokym nie je musli zlatohnede a chrumkave, a kym nam cely byt nevonia ako karamelova rozpravka.
Upecene musli nechame vychladnut. Skladujeme vo vzduchotesnych flastickach/nadobach.

Tip: Ku zmesi mozete pridat aj susene ovocie (v zime napriklad susene brusnice, cez leto hrozienka..). Ja jedavam musli s cerstvym ovocim, takze do zmesi si nepridavam susene ovocie, bolo by to prilis sladke. Ale chutiam sa medze nekladu, tak len pekne experimentujte! :)
