Sexi Cherry Cake. Višňový sexi koláč.

I think, that this might be on of the last summer recipes this year, because the weather in England seems to be leaving on a vacation. But, because I still can see little bit of the beautiful sunshine everyday, I´ve decided to make this fun and sexi cake with decandent cherries dipped in chocolate, just to bring a bit of happiness into dark days.
What´s fabulous with this recipe is, that you don´t even need to turn your oven on, it´s a raw cake, which sits in the freezer until you decide to pull it out and enjoy the luxury of having cake ready for you when you want it (need it?!) or when you´ll just want to cuddle.
I´ve used almonds and sunflower seeds here as a base for the cake, but you could use only almonds, or whatever nuts you´ve got. You can´t make a mistake. Almonds contain the highest percentage of protein of all nuts and are really good for youthey help to lower the cholesterol and help the heart to function properly. They are one of my favourite kind of nuts, they truly are amazing!
Then, as a filling, I´ve chosen cashew nuts (yes, really), because they are super creamy and make the right consistency (once soaked) for a great filling. These creamy nuts are very good for you guys, they fight cancer, they make your hair and skin healthy, plus they support our nervous system.
You can experiment with this cake and use different kind of fruit to put into your third layer of the cake, but I believe cherries make this cake to look a bit sexi and naughty. So I went for it. It´s simply scrumptious!

Myslim si, ze tento recept je asi posledny zo serie ´letnych´, pretoze to vyzera tak, ze krasne letne pocasie si berie dovolenku. Ale, kedze stale mozem vidiet nejake tie krasne teple luce slnka kazdy den, rozhodla som sa ´upiect´ tento hravy sexi kolac s dekadentnymi ceresnami namocenymi v cokolade. A to len preto, aby som nam priniesla trosku stastia a radosti do tmavych a zamracenych dni.
Najlepsie na tomto recepte je, ze nemusite ani zapinat ruru. Je to nepeceny kolac, ktory, ked raz date ´dokopy´, staci ho uz len polozit do mraznicky, kde na vas bude cakat dokym si nebudete chciet dopriat nieco luxusne (a uz hotove!), priamo ked to budete chciet (potrebovat?!). Alebo ak sa budete chciet len ´hýčkať ´.
Ako zaklad kolaca som pouzila mandle a slnecnicove semiacka, alebo mozete pouzit len mandle, alebo hocijake orechy mate po ruke. Naozaj nemozete spravit ziadnu chybu, experimentujte!:) Mandle obsahuju najvyssie mnozstvo proteinu zo vsetkych orechov, su pre vas velmi dobre a vyzivne, pomahaju znizovat cholesterol a pomahaju srdcu, aby fungovalo ako ma. Mandle su jedny z mojich najoblubenejsich orechov, su naozaj skvele! (a hodia sa skoro ku vsetkemu!).
Na napln kolaca som pouzila kesu oriesky (ano, naozaj), pretoze maju skvelu kremovu texturu, ked sa po namoceni vymixuju. Kesu oriesky su pre nas velmi zdrave- bojuju proti rakovine, prospievaju k zdraviu vlasov a pokozky, plus podporuju nas nervovy system.
S tymto receptom mozete experimentovat. Mozete pouzit ine ovocie ako visne, ja som sa ale rozhodla pouzit ich, pretoze verim tomu, ze ked su namocene v cokolade, vyzeraju naozaj sexi!

 

 

 

 

Sexi Cherry Cake
Crust:
1/2 cup raw almonds
1/4 cup raw sunflower seeds (you could use almonds as well)
10 dates (soaked in hot water for 20 minutes)
pinch of sea salt
Filling:
1 1/2 cup raw cashews (soaked overnight or for at least 4 hours)
1/3 cup coconut oil
1/3 cup raw honey (adjust to your liking)
juice of two lemons
1/2 vanilla bean or splash of vanilla extract
handful of cherries, plus extra for decoration (you can use frozen, but thaw them completely before using)
A first, make your base by blending everything in your mixer, until it reaches desired consistency (you can try it out by taking a bit of that mixture and rolling it between your hands – if it keeps the shape and sticks, it´s ready). Press the mixture into a 20cm round pan lined with baking paper – you can press the mixture down using your fingers or back of a spoon. When ready, put it to the freezer until you make the filling.
Gently warm up coconut oil and honey over low heat and then add the rest of the ingredients (except for cherries). Blend until very smooth. When ready, taste and adjust to your liking (you may add a bit more lemon juice or honey, depends on your taste buds). Pour most of the filling over your base, reserving about 1/4. Lift up the pan with that poured filling and release it so it hits your kitchen counter. Repeat a few times, this will flatten your filling nicely. Put into a freezer until you finish your third layer. Now, take your reserved filling and mix in a handful of cherries. Blend until smooth. Pour this pinky layer over your cake and flatten the surface (with eaither a knife or a gentle shaking). Put into freezer for about 4-6 hours until set. Before serving, take it out from the freezer 30 minutes ahead. Decorate with cherries(you can dip them into melted chocolate for a naughtier treat if you prefer. Slice with a clean knife that you warm up in a glass filled with almost hot water.
Enjoy this, it´s a pure happiness without the need of turning the oven on. :)

Višňový sexi koláč
Na zaklad:
1/2 salky mandli
1/4 salky slnecnicovych semiacok (alebo mozte pouzit mandle)
10 datli (namocenych na 20 minut v horucej vode)
stipka morskej soli
Na napln:
1 1/2 salky kesu orieskov (namocenych cez noc v dvojnasobnon mnozstve vody)
1/3 salky kokosoveho oleja
1/3 salky praveho medu (pouzite mnozstvo podla osobnej preferencie)
stava z 2 citronov
1/2 vanilkoveho struku (vyskrabkane semiacka)
hrst visni (mozu byt aj mrazene, ale nechajte ich roztopit a poriadne ich preceddte)
Najprv si pripravime zaklad kolaca. Vsetko spolu vymixujeme na lepkavu hmotu. Ci je zmes hotova zistite tak, ze si odoberiete trosku zmesi a stlacite medzi prstami – ak drzi tvar a poriadne sa lepi, mate hotovo. Hotovu zmes natlacime na spodok okruhlej formy. Povrch vyhladime prstami alebo zadnou stranou lyzice. Dame do mraziaka, kym si pripravime napln.
Scedene kesu oriesky, stavu z 2 citronov a semienka z vanilkoveho struku dame do mixera. Kokosovy olej a med si zohrejeme pri nizkej teplote, az kym sa nam kokosovy olej nerozpusti a med nie je tekuty. Potom med s olejom pridame do mixera a vsetko spolu vymiesame do hladka. Vzniknuty krem by mal byt naozaj jemnucky. Ochutname, ak treba pridame trochu viac medu. Vyberieme si formu so zakladom z mraznicky a vylejeme nan vacsiu cast kesu kremu. Odlozime si bokom asi 1/4. Vyliaty krem uhladime nozikom/lyzicou, alebo formu chytime do ruk a pustime z malej vysky na kuchynsku linku/stol. Opakujeme par krat. Takto sa nam povrch uhladi a zmiznu aj mozne vznikle bublinky v kreme. Dame do mraznicky.
Zvysny krem vymixujeme s ceresnami a vylejeme opat do formy. Uhladime a dame stuhnut do mraznicky priblizne na 4 hodiny, kym nie je kolac stuhnuty.
Kolac vyberieme z mraznicky asi tak 20-30 minut pred podavanim. Ozdobime visnami, ktore sme predtym namocili v roztopenej cokolade(cim tmavsia a kvalitnejsia, tym lepsie).
