My Breakfast Revolution: Chocolate Almond Muffins. Moja raňajková revolúcia: Čokoládovo-mandľové muffinky.

Because this recipe is a result ofthat kind of days, when you just don´t want to get out of your bed, but get cuddled up under your blanket and dream about the world. (We all get these days, right?:)
And because this is a recipe for when you need a little bit of a ´chocolate therapy´. No more words needed. Ladies and Gentlemen, Chocolate Almond Muffins.

Chocolate Almond Muffins

(Sugar free, gluten free)

1 1/2 cups almond meal
1/4 cup cacao powder (unsweetened)
1/4 cup coconut oil
1/4 cup milk of your choice
3 tablespoon honey (or sweetener of your choice)
2 happy eggs
1 tsp vanilla extract
zest of 1/2 orange (optional)
1 tsp baking powder (gluten free if intolerant)
pinch of sea salt
cacao nibs for finishing touch (optional)

Preheat to oven to 180°C. Mix together almond meal, cacao powder, baking powder and salt. Add the rest of ingredients – eggs, milk, coconut oil, honey, vanilla extract and zest of orange if using. Fill up your muffins cases up to 2/3, sprinkle over some cacao nibs and bake for 25 minutes, until beautifully risen.
Serve with dollop of some nice natural yoghurt.

Pretoze tento recept je vysledkom tych dni, kedy sa vam ani za nic na svete nechce postavit z postele, ale najradsej by ste sa iba zakudlili do deky a snivali dalej. (Stava sa to asi kazdemu z nas, vsak?:)
A pretoze, tento recept je venovany pre kazdeho, kto potrebuje malu ´cokoladovu terapiu´.
Uz tu naozaj nie je co viac dodat.
Dami a Pani, Cokoladovo-mandlove muffinky.
Cokoladovo-mandlove muffinky:
 
(Bez cukru, vhodne pre celiatikov)
 
1 1/2 salky mandlovej mucky/mletych mandli
1/4 salky kokosoveho oleja
1/4 salky kakaa, nesladeneho
1/4 salky mlieka podla vlastneho vyberu
2 stastne vajicka
3 lyzice medu
1 lyzicka prasku do peciva (bezlepkove, ak je nutne)
1 lyzicka vanilkoveho extraktu
kora z 1/2 pomaranca (individualne)
stipka morskej soli
kakaove boby na dekoraciu (individualne)
Ruru si predhrejeme na 180°C. V miske si spolu zmiesame mandlovu muku, kakao, prasok do peciva a sol. Postupnepridame vsetky ostatne ingrediencie – vajicka, olej, mlieko, med, vanilkovy extrakt, koru z pomaranca (ak pouzivame). Zmesou naplnime muffinkove kosicky do 2/3, posypeme kakaovymi bobmi a pecieme cca 25 minut, dokym nie su muffinky krasne a napucane.
Podavama s kvalitnym naturalnym (hustym!) jogurtom.
