My Breakfast Food Revolution: Morning Coconut Porridge. Moja raňajková revolúcia: Ovsená raňajková kaša s lesným ovocím.

 

Being inspired by my green wonders around the world and being inspired by this year´s Food Revolution Day, (led by Jamie Oliver, his ambassadors and everybody who got involved into this amazing idea), I want to bring something pretty big and healthy into your lives as well.. I want to bring you breakfast!

As you might know, in my country (yeah you are right, in Slovakia), there are many amazing women.. I´ll tell you about these 2, today. They recently became the ambassadors of Jamie Oliver´s Foundation-Food Revolution Foundation in Slovakia.
It takes them everything they have for trying to teach people how to enjoy good and healthy food, they encourage people to buy local, they encourage every one of us to make our own bread, they show people how to live healthily ever-after..and actually a lot more. A few days ago, they were brave enough to open their own cookery school in the capital of Slovakia, which is-btw-amazing! Check here for more details. I believe that there are miracles happening in the way we eat also because of these two strong women.

When I travel, I talk to a lot of people. A lot of different people about their cultures, traditions and then, both of the sides, we end up talking about food. That wouldn´t be me if I wouldn´t talk about food as much as I do. Seriously, people say, that they have never met anyone who could have a longer conversation about food than me. I am a food addict, I confess that with my whole heart.

Well, let´s get to the point.
I know how important it is to eat breakfast. For everybody. Personally, breakfast is my favourite part of the day, I could spend hours over my morning meal and freshly brewed tea. As I mentioned in my previous posts, I can´t stand the ´healthy´-loaded-with-sugar cereals, which act like some super foods. Instead, I make my own granola, my own porridge and my own healthy and happy meals. Every morning. Because I just can´t stand the idea of having my first meal of the day shaken out from a box.
And again, when I talk to people about food, they tell me that they just don´t have time for their meals, they don´t have time for eating breakfast ( I believe there is time – if you only gave yourself 10 minutes for a beautiful morning meal instead of checking out your facebook wall..right? )

With this on my heart, I came up with this modest and full-of-enthusiasm idea of encouraging people to have healthier and happier mornings every day from now on, with showing you all some simple ideas how to kick off your morning meals.
Let´s celebrate mornings with breakfast together.

Today´s first recipe is a simple porridge, packed with good fats and proteins (coconut milk, almonds) and antioxidants (fruit).

Morning Coconut Porridge with Berries
Makes 1 bigger portion for a very hungry person.

 

1 cup porridge oats, a.k.a. quick cooking oats ( I used scottish porridge oats with wheatbran and oatbran)
1 cup water
4 tbls coconut milk
handful frozen/fresh berries of your choice
nuts and seeds of your choice
dessicated coconut (unsweetened) for the final touch
a bit of honey for an extra sweetness (I didn´t use any, I find the coconut providing enough sweetness:)

In a little sauce pan, mix together the oats and water and cook over a low heat until the oats absorb most of water. If using frozen berries, mix them in as well and cook the porridge until berries are thawed completely. When ready, turn the heat off and mix in the coconut milk. Stir through carefully.
Pour into your very own morning bowl, add extra berries on top to make it pretty, sprinkle over dessicated coconut and top with nuts/seeds. Drizle with a bit of honey, if necessary. Enjoy!

Inspirovana mojimi zelenymi potulkami svetom a navyse inspirovana aj tohto rocnym skvelym dnom revolucie jedla (vedene Jamie Oliverom, jeho ambasadormi po celom svete a vlastne kazdym, kto sa zapojil do tejto skvelej myslienky) chcem aj ja vam priniest nieco velke a zdrave do zivota..Chcem vam priniest ranajky!

Ako asi dobre viete, na Slovensku mame velmi vela uspesnych a uzasnych zien.. Dnes vam poviem o dvoch z nich. Prednedavnom sa tieto dve mile baby stali amsadorkami nadacie Jamieho Oliviera-Food Revolution Foundation na Slovensku. Do svojej prace vkladaju vsetko co maju, vsetko co vedia sa snazia posunut dalej nam vsetkym. Siria osvetu dobreho a zdraveho jedla, podporuju v ludoch myslienku nakupovania lokalnych potravin, ukazuju nam ake jednoduche je upiect si doma vlastny chlebik, ale hlavne v nas podporuju ducha zdravej vyzivy a ukazuju nam ako zit zdravo az..az navzdy. :)
Su natolko dobre, ze pred par dnami si otvorili v priestoroch starej trznice v Bratislave vlastnu teoreticku a prakticku skolu varenia, co je naozaj uzasne. Naozaj verim v to, ze na Slovensku sa deju zazraky v stravovani aj vdaka tymto dvom slecnam. Vdaka aj za mna.

V poslednych rokoch vela cestujem, spoznavam naozaj mnoho zaujimavych ludi, z roznych kutov sveta. Spoznavam rozne narodnosti, kultury, pytam sa ludi na ich zvyky, tradicie a..pytam sa ich samozrejme na jedlo. Skoro vzdy skoncim s ludmi pri konverzacii o jedle, to by som ani nebola ja. Vacsina ludi, ktori ma stretnu zvyknu hovorit, ze este nestretli cloveka, ktory by sa dokazal tak dlho rozpravat o jedle ako ja. A naozaj som taka, priznavam to z celeho svojho srdca, som zavislak na dobrom jedle.

Ale dostanme sa uz k pointe.
Naozaj viem, ake dolezite je ranajkovat. Pre mna osobne su ranajky najkrajsim a najlepsim kuskom dna, pre mna zacina den hned pri ranajkach. Mohla by som stravit hodiny a hodiny nad svojimi ranajkami a cerstvo uvarenym cajom. Ako som uz spominala v mojich predoslych prispevkoch, nemozem vystat vsetky tie ´zdrave ´ ceriale naplnene cukrom a hnusnymi farbivami, ktore sa snazia byt nieco ako najzdravsie ranajky na svete. Namiesto toho aby som sa ´pchala´ takymito umelymi cukrami a sladkym nicim, ranajky si jednoducho robim sama. Peciem si vlastne cerealie, varim si vlastne kase, pripravujem si svoje vlastne ´zelene´ ranajky. Nemozem vystat myslienku toho, ze moje prve jedlo dna by boli cukrove gulicky v tvare vlociek rovno z krabice.A ze sa budu pri tom tvarit zdravo a chutne!
Ked sa rozpravam s ludmi o jedle, o ich zvykoch a ich stravovacich navykoch, vacsina ludi mi vzdy povie, ze jednoducho nemaju rano cas na ranajky. (A vlastne kazdy by mal cas; uz len keby sme si prvych 10 minut z nasho dne nepozerali novinky na socialnych sietach a namiesto toho ranajkovali, vsak? :)

S tymto vsetkym co mi lezi na srdci, som sa rozhodla vyjst na verejnost s mojim skromnym napadom plnym entuziazmu-ukazat ludom ako jednoducho a zdravo mozu ludia zacat ranajkovat a ako svojim ranam mozu dodat tie prave ´grady ´ :)

Nech je kazde rano krasne, so zdravymi ranajkami na stole. Sme v tom vsetci spolu! :)

Dnesny prvy recept je jednoducha ranajkova kasa s kokosom, lesnym ovocim a orieskami.

Ovsena ranajkova kasa s lesnym ovocim

(1 porcia pre velmi hladneho.)

1 salka jemnych vlociek
1 salka vody
4 lyzice kokosove mlieka
plna hrst cesrtveho/mrazeneho ovocia
orechy a semiacky podla vlastnej chuti
struhany kokos na dozdobenie (nesladeny)
trosku medu na dosladenie (ja som nepouzila ziadne sladidlo, myslim, ze kokos naozaj nahradi tu sladku chut)

V kastroliku spolu zmiesame vlocky s vodou a ak pouzivame mrazene ovocie, pridame aj to. Vsetko spolu povarime, kym nam nevznikne kasa a ovocie sa nerozmrazi. Ked sme s vysledkom spokojny, kasu odstavime z ohna a jemne do kase vmiesame kokosove mlieko. Kasu si prelejeme do nasej ranajkovej misky, posypeme extra ovocim, struhanym kokosom a orieskami/semiackami. Ak potrebujeme, dosladime si kasu medikom.
