Banana Bread and Morning Pancakes

Do you know that feeling when your life is bringing you so many amazing things that in the end of a day, you feel like 24 hours is not enough for doing all the thing you want to do? This is how I feel these past days, weeks and months :)

I haven´t posted anything sweet for about two weeks. So here is a triple post, because you, my dear readers, were so patient.
But wait!, There are some backround stories to it,too. As always :)
I believe in energy and destiny. You can call me naive if you want, but I believe that everything we do, we do for a reason. Everywhere we go, we go because we want to. Like I did last Wednesday, for instance.
For those who don´t know, Martin (the largest city near my village), is a cultural city. There are so many great cultural events that take place in Martin. Every month, there is always something happening . I mean concerts, exhibitions, art events, everything really. When I was walking with my boy across Martin´s square, we stopped by a map, full of cultural events scheduled for this month. I got excited by what I saw. There is a course about healthy lifestyle every Wednesday. With that in my mind, the three of us (me, my mother and my grandma) attended the course. I had no idea, what it was going to be about.
We got into a city hall, where the course took place, and got ourselves settled in a large conference room with more then 100 people who were excited as much as we were. Door closed and really nice woman in a skirt took a microphone and welcomed us very friendly, with a smile on her face. From the first second she started talking until she said ´thank you for coming´ – I was hooked by everything I´ve heard.
This sweet looking speaker and her family run a place, called ´Dúšok zdravia´ (for my Englis speaking friends- ´The sip of a healthiness.´ ) I haven´t been there so far, but first thing tomorrow morning, I´m getting bus and I´m getting everything they offer there. (According to their menu I´ve read, and according to the cakes we´ve all tasted at the course, I love the place already!)
Let me explain you. ´Dúšok zdravia´ is a special place for tea lovers, it is a microbiotic-vegan restaurant, it is a catering company,..I´d say it is everything your body needs for being healhy under one roof. (again, I haven´t been there, I just read their website, which persuaded me to go there :)
Back to the course I´ve been to. The speaker was talking about so many different things!  About food we eat, about using chemical salt in our kitchen, how bad eating habbits slowly destroy our bodies, what kind of food we should be eating, what to eat if we want to overcome different diseases without taking pills, how to prevent our health by eating right,how to stop being blind and start reading lables on food we listening a all of the facts that surround us every day, the speaker made all of us, who were there, speachless. I have to admit I´ve never been so deeply interested in a healthy lifestyle like I am now. I mean..we always try to keep our lives healthy in my family, but there are so many important things we didn´t know about, so many misleading articles and stories out there we believed in, so many new and amazing zistenia. In this way, I want to thank this young lady for what she does. She spends time baking for total stranges so they can experience cakes, which are actually healthy, for her time every Wednesday, so she can talk to people and help them realise what they have, for changing people´s minds and thoughts about healty lifestyle, for running such a healthy and happy place like ´Dúšok zdravia´.
I love food, or I´d say I love good and quality food. Me and my mom are passionate about cooking and baking as long as my mom worked in Italy(which was about 14 years ago.) My mother was the one who showed me how to appreciate food and how to enjoy the moments we spend all together around one table. That´s how my passion grew and I guess that´s how I´ve got passionate about healthy lifestyle these past months, too. It´s been exactly one year since I pointed my attention to healthy things and to a better, healthier, stronger and happier me and my family.
I hope that that there will be more people like the great woman who spreads healthy words around the globe, I hope there will be more people, who respect their body, their mind.
In the recipes I´m bringing you today, I got inspired by things we eat. I just turned them into healthier versions. Enjoy!

And remember that your body is a temple, not a trash can.

Banana Bread
(Adapted from one beautiful czech foodblog

2 cups wholemeal flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
pinch of salt
1/2 cup apple pure ( you can make your own by cooking 2 apples with a little amount of water)
1/2 teaspoon baking powder
1/2 cup butter or baker´s fat(I´ve got mine from bio shop), soften
1/3 cup honey
1 teaspoon vanilla extract
3-4 overipe bananas (according to their size)
walnuts/good quality dark chocolate chips (optional)

Mix together flour, baking powder, bicarbonate of soda, salt and walnuts/chocolate pieces.
In another bowl, mix all of your wet ingredients with mashed bananas.
Slowly flod dry ingredients into banana mixture. Do not over mix.
Bake in a greased and lined with a baking paper form.
Bake at 180°C for about 1 hour, or until inserted skewer comes out clean and dry.
The bananas and apple pure makes this banana bread really moist and soft. It is perfect with a cup of tea or coffee.


Morning Pancakes with Cottage Cheese and Walnuts

100 g wholemeal flour
1 teaspoon baking powder
2 eggs
1 tablespoon runny honey, good quality
pinch of salt
1 package of natural  cottage cheese
cold pressed rapeseed oil/coconut oil/butter/baker´s fat for frying

Mix together flour, baking powder and salt. Add eggs, honey and cottage cheese and mix until you have a smooth dough. If your dough is too thick, simply mix in a few tablespoons of milk.
Fry pancakes on a thin layer of fat of your choice,top up with honey and crushed walnuts.
