Today, I´m bringing you this amazing, delicious (and healthy) recipe for any time of a week that can be made in a few minutes. The only hard part in this recipe is cutting almonds into pieces. (Yes, really. :)
Today is the last day of Christmas feasts in Slovakia, the last day of Christmas vacation. So, in these rainy and cold days we are experiencing, we need something warm, something that can warm up our hearts and minds. And I think that the smell of cinnamon, apples and almonds is just perfect!
Apple and Cinnamon Muffins with Cinnamon Crumble:

250g wholewheat flour
2 tsp baking powder
2 tsp ground cinnamon
125 g brown sugar, plus 4 tsp brown sugar for crumble topping
125 ml runny honey (homemade works the best)
80 ml plain yoghurt
125 ml rapeseed oil
Preheat oven to 200°C. Core and peel your 2 apples, cut them into small chunks. Cut your almonds into pieces as well.
Make your crumble topping.Mix 1 tsp cinnamon, 4tsp brown sugar and half of the cut almonds. Set aside.
In one bowl mix together flour, baking powder and remaining tsp of cinnamon. In another bowl stir together 125 g brown sugar, honey, yoghurt, oil and eggs. Stir in flour mixture, apples and the rest of your almonds. Fill up your muffin cases, sprinkle with cinnamon crumble and bake for about 20 minutes. Let them cool and serve.
